    I guess everybody is a food critic nowadays...he’s showing us his way...and when you get you own cooking channel you can show us your way...geez if you don’t like the amounts he used...you my dear people don’t have to eat it...that’s why you season to your own taste...but to insult the man like you’re freaking Gordon Ramsey and he’s on Top Chef is just plain wrong

    I just don't understand all the hate in the comments. Maybe I wouldn't do it exactly this way but I did get a couple good ideas and I sure appreciate his love of cooking.       But you are supposed to season your rice with salt...season your dishes in layers. I like really seasoned food but that was a lot of seasoning for even me!

      Tutu Bousley when you can't soak over night. Bring your beans to a boil for 2 mins and then simmer for about one hr.....

      Tutu Bousley also instead of instant rice lol use jasmine rice and instead of bell pepper use poblano pepper. Has a better flavor, don't use Polish sausage use andouille sausage. Do not I repeat do not ever cook this crap he is cooking again LOL. Get a slow cooker and just cook it over night or in the morning and they will be ready when u get home from work. 8 hrs but we'll worth it

      I realize that this was an A & B conversation, so to speak. But I find that cooking alot of dishes, especially any kind of dry beans in a crock pot is overkill. They never taste as good as when I cook them on the stovetop. Could be because I'm form the old school, down south & we don't cook with a lot of slow cookers. My late Aunt Ruby, God rest her soul, would turn over twice if she knew I was cooking a Sunday classic such as kidney beans & rice in a slow cooker.
      Oh yeah, and I must say that I was kind of side eyeing this brother when he had added the packets of taco seasoning & forgot what else in a packet he poured in there, but it did look really good in the end. Really nice & thick before he added the water to it. So gotta give him props for that.

      snowblo1 I'm from the south as well New Orleans. Crock pots are used a lot. Heat is heat. 8 hrs on high is perfect.

    - Green pepper, celery, onion
    - 4 cans red beans
    - Sugar
    - Crushed red papper
    - Garlic powder
    - Soul food seasoning
    - Oregano
    - Cajun spice
    - Chili powder
    - Sage
    - Green seasoning
    - 1 pack chili seasoning
    - 1 pack taco seasoning
    - 1 can water
    - Simmer 30 minutes

    wonderufl. I always look for canned beans in the discount section (those cans that are bent and are sold for 50 cents just to get rid of them). Throw in onions, sausage, weiners, peppers, etc. can't go wrong with that. A mexican dish I make is frijoles Charros , similiar to what your making. In this case you add bacon and or sausage, wieiners, pork, etc... onions, tomato, cilantro chile peppers......It's awesome and easy!!!

    Look, I love red beans. And my preferred method takes over night soaking and 10 hours cooking. But if this gets y'all to try cooking red beans, so be it. In the south, we have a brand that's called blue runner, they make good canned red beans. But... When you're ready to try dry beans, Adam Ragusa has a good recipe, Charlie Andrews as well, food wishes does one, coop can cook, t-roy, Kent Rollins... Enjoy y'all.

    I know bacon grease is tasty, but it is so dangerous to use because it clogs up your cardiovascular system. Would encourage you to swap that for olive oil and the white sugar for honey or light brown sugar instead.

    I just stumbled on this guy after watching 5 other videos on red beans. This is by far my favorite. I was sorry to read in comments he passed--or that he had haters. I LOVED his delivery! I hope his family is well.

    Eric, I’m from New Orleans where red beans and rice comes from and I just wanted to give you the correct way we call the aromatics of onion, bell pepper and celery, we call it the “trinity”. Mirepoix is the aromatic blend of onion, celery, carrot and is from France. The trinity is from Louisiana, but is of French and Spanish influence.
    When Louisiana locals want to make red beans in a hurry (instead of from scratch, which we do when we have time) we use the Louisiana brand canned red beans called “Blue Runner”. Get you some. The beans are already creamed. New Orleans red beans must be creamy. And leave the sugar, taco seasoning, chili mix and chili powder out next time lol the ones you made are more like red beans from Central America instead of New Orleans.
