@John Healy In the Bible, the egyptian mystics were able to perform most of the same miracles that Moses was able to, only less efficiently and the only way that would happen is if their gods were real as well. The earliest abrahamic cosmology allowed for other gods to exist, they were just supposedly less powerful than Yahweh and people were supposed to believe that. It wasn't until Deuteronomy where the notion of monotheism was enforced.
So even among staunch believers (of which there's at least two of them in the first three movies), it is possible to readily admit that there's supernatural forces not tied to their religion.

Every character has a meaningful motivation. Also, Elizabeth left Jack there because she has feelings for him. The "Kraken is after you" thing was only a cover. The reason Jack calls her a pirate afterwards is because she lied to him. When they had that conversation on the ship, Elizabeth told Jack that she trusts him. This is proven to be false, because she clearly did not trust him enough to believe he would sacrifice himself so that other could live, even though he wanted to. Think about it. If Jack really wants to escape, can't he just yell at his crew to save him? No, he wanted to stay there.
