    Oh Rachel! So wonderful to see this video! My husband was just diagnosed with kidney cancer. The prognosis is good, Thank God!!!     I have tried several recipes using masa (not masa harina) where you have to mix the lard until fluffy, and I have never liked the several recipes I've tried.
    I decided to give this one a try because adding melted lard seemed so much easier than mixing "the hell out of it. LOL". So, First time using masa harina and first time using melted lard.
    I made them with the chicken in green sauce + slice of cream cheese in every tamale.
    Thank you sooooo much!!! These tamales are delicious.
    I just made some adjustments on saltiness and baking powder :
    - For the salsa I used the 2 teaspoons of chicken bouillon + 1 1/2 teaspoons salt.
    - for the masa I used 1 1/4 teaspoon salt + 2 1/2 teaspoons chicken bouillon.
    And 1 Tablespoon (3 teaspoons) baking powder.

    Awesome video! I've been making tamales for years, but I have to admit you are MUCH neater than I am about it, lol! And I had no clue what it was that was making my green sauce so sour, I had no idea that you had to boil them on low until they were olive-colored, and not let the skins break....AND let them cool completely, thank you so much for that info! I also use your red sauce for enchiladas, best sauce I have EVER tasted or made- thanks again!

    Hi Rachel I tried making these Tamales tonight. I couldn't find large corn husk. I bought a spice grinder today. I wish I had put the masa thicker. I made the masa ball and used plastic to spread way easier. I put a turkey in the oven & used that meat. First time making these different but very tasty thank you.     Tamales are one of my favorite foods. Green Chile Chicken are a New Mexico Christmas tradition! I want to try your recipe because I have never used cream cheese in my tamales! I think the cream cheese will make the tamales creamy! I have never put allspice in the broth or maza. Wonderful idea! Thank you for improving my tamales!! Merry Christmas!

    It's been a loooong time since I made tamales with my mother in law and she used the masa that is like a dough in the store then you mix in the sauce. I loved this video so much. I was looking for a recipe that is easier to handle and won't require the neighborhood to come help. My daughter wants to make tamales this year for Christmas. We will make your recipe.     Years ago, in a locally well respected Mexican restaurant, I ordered something that included a tomatillo sauce. It was SO sour and SO bitter that I wondered how anyone could stand the taste and I've avoided tomatillos ever since. Now I know what was wrong with them. Thanks for the enlightenment.

      Definitely! I've ordered green chilaquiles from a nearby Mexican restaurant and they're so sour that they give me heartburn. I just don't order them anymore.

    This was hard work! You made it look easy. I think there is a learning curve on how to smear these husks and load them. I will have to watch it again. They are in the pot now cooking, first look too sticky, so I’m cooking another 30. I think next time I try this, I will buy a rotisserie chicken and use boxed chicken broth to save some labor. I could never get the ball of masa to float…..my tamales are probably going to taste like crap. But….if so, I will try and try again. Your laborious efforts certainly. Make for wonderful flavor but this is a 2 man job I think. Lol

    I love these Rachel! You make it look so easy. We don’t have those big,beautiful tomatillos here in Oregon. I wonder if a jar of salsa verde would be okay? I would love to make these to take to our son’s home on Christmas Eve.

      Hi Judy! I have used whole canned tomatillos (in a pinch) when making salsa verde & it turns out just as good as when I use fresh. Usually found in the Latin food section but I think you can also order on Amazon if your local market doesn't carry them. Merry Christmas!

    Might change my menu for Christmas. I made tamales once took me all day, but I used banana leaves. In reality Mrs.Rachael how long did this take you. My ex was Mexican and on Christmas Eve we had this but they made hundreds and had several ladies in the kitchen help is great w tamales. Lol but this green chili recipe is a lot easier then the red sauce I used years ago.

    Well, I made tamales for the first time, right along with you. I can’t believe I actually did it and they tasted fantastic. Thank you so much. I can’t understand what took me so long and now I’m going to make them once a month. I even got hubby to help roll them and we had a fun time together.

      Rachael my husband is from Mexico City and I have learn to cook mexican food well, I stumble on your channel because my granddaughter wanted me to make chicken enchilada and I wanted a sauce that was homemade and your 5 star enchilada was the one I used.     Dear Mrs. Rachel - You just inspired me to make pollo tamales which I love so much. I always buy but a good one is hard to find. It's done very sloppy and not really tasting good. I will watch your demo again to see more of your wonderful step by step instructions. You are a great chef and I think I am very blessed to come across your channel. Also, I have decided not to use any chile/picantes so I thought it will make it easier and or will cut some steps shorter. Many thanks for all your other wonderful recipes.     So happy to see this video, my 16yo daughter attempted to make tamales last week. Unfortunately they did not turn out well. I now have confidence to attempt them again and they be worth eating!
