Birthday Cake but GLUTEN FREE

- Matcha and toasted sesame seeds are one of my favorite combos :)
I came up with this for my friend's birthday. The almond and olive oil base make it super moist, and it's the perfect dessert for anyone who is gluten or lactose intolerant.
It's really simple to make but the flaked almonds and sesame seeds on top give it that extra boost ✨

INGREDIENTS
1/2 cup olive oil
1/2 cup oat or any alternative milk
2 tbsp white and black sesame seeds (I mixed 1 tbsp of white sesame with 1 tbsp of black sesame) + more for topping
2 eggs
1 tsp vanilla extract
166g almond flour
83g oat flour (blitz regular oats in a food processor)
168g white sugar
1 1/2 tbsp matcha powder
1 1/2 tsp baking powder
1/2 tsp salt
1 handful of flaked almonds (for the top)
METHOD
1. Toast sesame seeds until they are fragrant and slightly brown
2. Combine sesame seeds, olive oil, oat milk and eggs
3. Combine almond flour, oat flour, sugar, matcha, baking powder and salt
4. Preheat oven to 176 C/250 F, line and grease 8 inch cake pan
5. Combine wet and dry ingredients
6. Pour into cake pan and bake for 20mins
7. Remove from oven, sprinkle with flaked almonds and sesame seeds
8. Bake for another 25mins
