Made them yesterday, was my first time macarons as well. The one thing I didn't do by recipe was straining the almond flour as it was already fine, but wouldn't go through the mesh. I would have to press all of it through. Still worked out fine, only one Macaron broke. And I've had issues with the ganache, but I guess that's on me (also my first time making ganache). Things that might help others: I let them dry for an hour, not 30 min, before baking and preheated the oven and let it run on 150°C for a couple of mins to be somewhat sure it really had the temperature. And I didn't open the oven until 16 mins passed and I took them out. I did strain the powdered sugar and cocoa powder. But it might've been an idea to just blend everything for a bit and put it through the sieve again. Thank you for the recipe and telling me I can do it =)
Since I've now made them a lot of times: How long you need to dry them depends on the humidity. Around here we usually have 90+%, so an hour can make sense, although 30-40 min is usually enough. I also had great results with 20min, but that was when it hadn't rained in 4 weeks and the humidity was maybe around 40%. The longer you let them dry the harder their shell is (gets softer with additional time filled in the fridge though) For the ganache I usually use a 50% cocoa chocolate and am eyeballing about the same weight of cream. I also found that having a bowl that sits on a pot, filling the pot with boiling water (without additional heat from a stove), pouring the cream and chopped chocolate into the bowl and stirring it until it binds is the best method to make ganache. Let it sit in a fridge for about 2-3 hours after that. With the hot water+bowl method you can also save ganache that didn't bind properly.

Trial and error with macarons is unfortunately inevitable. I've had a lot of successful batches, but recently had a bout of bad batches. The excitement and relief you get when you troubleshoot and solve the problem for good macarons is unlike any other. You'll get it, don't give up!

Little tip so the shells come out smoother!- once you have the size you want stop adding pressure to the piping bag and do a circle motion, after tapping them you can go in with a toothpick to poke out any bubbles and fix the holes or/and fix the shape of the macaron! FIY for the batter use a folding mixing method and the batter should be able to make continuous 8 or infinity signs when it's done!

I know macarons are very fincky and the measurements have to be very precise, you seemed to have quite a bit of discard of the almond flour, what then? do you replace the remaining amount with more or do you just leave it as is?

If you guys don’t know, in Canada. They sell macarons for like 3 dollars. And the reason why for and expensive macaron is because. It’s really hard to make macarons and get that perfect consistency. It took me about 20 try’s to make the perfect macaron. And I know how hard it is to make it because in the first try. My cookie would break, it would melt. So it takes time and patience to get the perfect macaron. But always don’t give up. I know you can do it❤

Hi. I recommend to add more almond flour to make the number exact. That way you’ll have the macaron perfect every time. However, from my experience 20 grams of dry ingredients won’t make much of a difference. I bake macarons for the past 4 years now.

No you cannot use wheat flour only nut flour. Don't use cups, weigh it out in grams. You can substitute with other nut flours - hazelnut, pecan etc. Don't process your almond flour - it releases the oils in the almonds. Use whipping cream in the filling.
when we filter out the larger pieces of the almond flour, powdered sugar, and cocoa powder do we add more of it to make up for the lost weight? or do the big pieces count towards the ingredient weight even when we discard them?

I place the bowl on the scale and add the dry ingredients through the strainer. That way it’s the most accurate.

Add the lost weight if needed but you’re not likely to be discarding more than a few grams.
