Turkish KOFTE & PIDE Kebab: Perfect Iftar Meal for Ramadan

- Turkish KOFTE & PIDE Kebab: Perfect Iftar Meal for Ramadan. On our first iftar I bring two all time favorites to one dish: Ramadan pide and Turkish kofte! We call this "Köfteli Pide" meaning köfte with pide base. It is similar to iskender and perfect to use any leftover breads or pides. But I'll be using fresh pide that will make as well.

Ingredients for Kofte Mix:
1 medium size onion
500gr. beef or mix of beef and lamb
1 tsp each black pepper, paprika, cumin
1+1/2 tsp salt
1/2 tsp baking soda
3/4 cup bread crumbs
about 1/3 cup cold water
For the Ramadan and small pide dough:
First mix:
1/2 cup lukewarm water
20gr. fresh yeast or 1 tbsp dry active yeast
1 tbsp sugar after 5 minutes
1/2 cup lukewarm milk + 3/4 cup warm water
5 cups bread or all-purpose flour
1-2 cups whole wheat flour (its optional, you can use only all-purpose if you prefer)
2+1/2 tsp salt
2 tbsp olive oil to get the dough
For the egg wash:
1 egg yolk
2 tbsp milk or yogurt
2 tbsp olive oil
sesame and nigella seeds

my recommendation for the bread is to use “roomal” instead of egg. It’s a paste made of flour, baking soda, and water used on Iranian Barbari bread.

Hi Beatrice, thank you so much! Yes surely you can use your other frying pan or nonstick pan. IT might stick on stainless steel but others that you already fry meat etc. would be fine. I!ll check your comment. Sometimes I miss the second replies while seeing the new ones. Thanks again❤️
