做紅燒肉用醋燒的肉很好吃,一點點糖就好,不要做成糖醋的。西北地區有這種做法,鄉村人家燒肉放醋,去肉腥味,比放料酒還好。

I worry about the translation that says “balsamic vinegar”. It’s a Chinese recipe, it obviously refers to Chinkiang vinegar (aka Zhejiang vinegar). It’s miles away from balsamic.

I'm so fortunate to live in a country where our Butchers prepare the meat without the skin being hairy, or the pork smelling like fish. I couldn't eat it if I smelled that
I don't think they meant literal "fishy" - if it does smell fishy, then the pork is starting to rot and you should not eat it. Normally fresh, raw pork would smell slightly metallic or a bit gamey or sweetish.
When she said, "fishy smell" she meant the unpleasant smell not that the pork smell like fish. 😂😂😂
The Chinese term she uses encompasses both fish and meat. So it’s either “fishy smell”, “porky smell”, or the strong smell you get from mutton. In Chinese cookery it is desirable to reduce these strong aromas.

Too many steps and you’re removing precious nutrients from the pork when you boil the cubed pork in water! I suggest you skip the boiling process and instead add herbs and spices to the cubed pork during frying to remove the fishy smell. By the way, why is this not braising pork? You’re just adding beer to braise instead of water so please be honest with your intro.
