大眼雞白菜豆腐湯
材料：
大眼雞3條
白菜仔8兩
豆腐一磚
薑（大）一舊
處理：
1. 大眼雞，清除內臟，清水洗乾淨，擎乾水，廚紙索乾。
2. 白菜仔，打直一開二，清水浸。
3. 薑，清水洗乾淨，打直一開二，拍鬆。
4. 豆腐，清水洗乾淨，切開一舊舊。
烹調：
1. 大火煲滾一鑊水。
2. 另一邊，大火在鑊內燒熱油2湯匙。
3. 放魚落鑊煎香，轉中火。
4. 魚的一面已煎至金黃色，反轉繼續煎。
5. 薑，放鑊內煎，同時加入豆腐煎香，大約煎2分鐘。
6. 加入大滾水落鑊，冚蓋，大火滾7分鐘，滾出魚味。
7. 白菜仔，清水洗幾次，擎乾水。
8. 湯已滾了8分鐘，夾起魚，放上碟。
9. 加入白菜仔在湯內，大火滾起至軟身。
10. 完成，倒入大碗內。
11. 可享用。
Pak choy and tofu soup with big eye chicken fish
Ingredients:
Big eye chicken fish 3 Nos.
Baby pak choy 8 taels
Tofu 1 cube
Ginger (big) 1 No.
Preparation:
1. The fish, remove intestines. Rinse thoroughly. Drain. Dry with kitchen towels.
2. Pak choy, divide it into 2 shares vertically. Soak in tap water.
3. Ginger, rinse with tap water. Divide it into 2 shares vertically. Beat well.
4. Tofu, rinse with tap water. Dice in cubes.
Steps:
1. Heat up a wok of water at high flame.
2. On the other side, heat up 2 tbsp of oil at high flame in wok.
3. Put the fish in wok. Fry well. Turn to medium flame.
4. The fish, one side has been fried into golden yellow, flip over and continue frying.
5. Ginger, fry in wok. Add in tofu, fry well. Fry for about 2 minutes.
6. Add in 2L of water in wok. Cover up the wok. Boil at high flame for 7 minutes, to release the flavour.
7. Pak choy, rinse several times. Drain.
8. Soup has been boiled for 8 minutes, pick up the fish. Put on plate.
9. Add in the pak choy in the soup. Heat up at high flame until it turns soft.
10. Complete. Pour into a big bowl.
11. Serve.
