The Best Homemade Mexican Enchilada Sauce
4-6 dried Mexican Chilies
2 cups hot chicken broth
1 - 28oz can diced or crushed tomatoes
4-5 large roasted red bell peppers
5-6 cloves garlic
Snip ends of chilies and deseed. You may have to
open up the peppers. Cover the chilies with hot
chicken broth (or veggie broth or water) and let
set for 30 minutes until tender.
Place chilies and juice in blender or food
processor. Add tomatoes, roasted bell peppers
and garlic. Blend until pureed.
3 tbsp olive oil
3 tbsp flour
In a saucepan on medium heat add olive oil and
flour. Cook for 2-3 minutes constantly stirring.
Add in pureed chili mixture and stir well.
3 tbsp chili powder
1 tsp cumin
1 tsp thyme
1 tsp chipotle powder
1 tsp sugar
1 tbsp oregano
salt and pepper to taste
Add above spices to sauce and stir well.
Bring up to heat and let simmer for 30
minutes or until reduced.
Stores well..
Enjoy..

I just wanted to add, this recipe makes an insanely good spicy sauce. I made shredded chicken enchiladas (for 2) twice with this recipe and still have a decent amount left. The second time I added some chicken broth (because I had it open), brought to a simmer and then pushed it through a fine-mesh strainer (I put the pulp back in the leftovers). I'm telling you right now you simply cannot buy this stuff at the store, it is SO good.

This is the sauce I still swear by till this day, I’ve made enchiladas for my family multiple times & they never get tired of it.
The chili powder or any other dried or powdered spices (like cumin) could be added during your roux process (olive oil + flour) for a minute or two. Heating certain dried and powdered spices in a bit of oil really releases their potential. I call it ''blooming'' the spices in the oil or butter.

nailed it my chile was dead when i added spices to the sauce. Alive when added to the meat.

I haved use this to make enchiladas for my husband, I also changed it to chicken broth dried guajillo chiles, sometimes I add a morita Chile for a smoky flavor... if a Mexican likes it you know it’s good ❤️

MrMegaFredZeppelin Same here. I go to the local Hispanic meat market here in Texas and other markets and never knew what that Big bag of chili peppers was for. Now I know, I’m going to try this sauce and cause I’m from a different culture improve over time to my taste and likings. I love cooking and learning not only soul food but other culture’s food as well.
I make sauces very similar to this and she’s not wrong, it’s so much better than any sauce you buy. Cook this and you won’t regret it.

This is more of a personal version of salsa roja. Chile guajillo, tomatoes, onion, cumin, chicken buillon is all that is needed in this sauce but for heat id suggest chile arbol. I come from a mexican family and had to learn the basics before i got older lol.

I made this...simmered for about 40 minutes. added about 1 tsp salt and half of lime (juice). used dried ancho chile....was alil bitter but with lime juice and salt at the end..it tasted better. good recipe. ..I'll tweet alil next time. I love experimenting ;-)

Looks good I do the same thing except for I use California chiles and I strain that stuff through very small strainer so there's not big chunks of the Chili's

Looks Great! May I suggest cooking all of your spices on the pan first. I have found that sauteing all of my spices and herbs on the pan with light oil before adding anything else to the pan makes a much more flavorful and aromatic food.

I do have a question though the chili peppers once you take the seeds out, or the pepper still really hot? I don’t like hot peppers, For me it ruins the taste of my food. I don't know Tess but it's worth a try. Some seeds are incredibly resilient. Take forest fires for instance, years later there's a whole new forest from seeds that survived the fire. I have a ton of dill growing in my green house from dill seeds I have in my spice rack. I like to experiment with stuff like that. ; o)
