    You can make the pudding without the eggs. Make the pudding as instructed, only don't add the egg yolks. The taste of the pudding will be the same, but you may find the texture is not quite as silky smooth. Very good though.

    You only need to strain the pudding if you have lumps.

    I've never thought of it as optional, but I guess you could leave it out.

    If you use a spring whisk to stir, there will be no lumps and no burned gunk on the bottom of the pan because you can reach the entire bottom with it. A spatula will miss some spots because it doesn't cover as much surface area as fast.

    I made this, and I put it in edible chocolate cups and topped with whipped cream. The crowd I served it to was very impressed! :)

    Take one cup (240 ml) of milk and stir in 1 tablespoon of lemon juice or vinegar. Let stand for 10 minutes at room temperature and you have an excellent substitute for commercially made buttermilk.

    Stephanie after all these long years I made this for a dinner yesterday. This was the highlight of my dinner. I doubled the amount. It’s so smooth and velvety. Will be number one dessert for us 😍

    You should be able to, although I wouldn't use skim milk in this recipe or you may have a problem with it not being thick enough.

    I have made this several times and it’s truly the best recipe out there!! Taking it in a bag to squirt into cups for our hike tomorrow so the kids will be motivated for the end of hike picnic!

    So the pudding is delicate so is that why you don't use a whisk to kill the Klumps

    Joy, I've tried so many chocolate pudding recipes and yours is the best! I just threw everything in the pan with the exception of the vanilla and butter which I put last. Put in med heat, non stop stirring and I ended up with my husband's favorite dessert. Thank you!

    Hi Stephanie. I made this pudding today and was amazed by how good it was and how easy to make. It's very rich, I used whole milk, and I think it could make 6 - 8 servings if whipped cream and chocolate shavings to decorate

    this is actually a very successful pudding recipe so delicious ^_^ I just whipped the yolks with the sugar and the vanilla until they formed a very smooth pale paste

    Glitza you can use all purpose flour. However it will take longer to thicken. Roughly 15 minutes or so

    I add sugar to the milk, before or while heating it... that prevents it from overflowing. Also I like the pudding warm... and instead of whipped cream, I whisk the egg white until it's somewhat stiff, then top off the pudding with some of it. Yum! 😋

    Could this be used as a filling for a pie if I increased the corn starch? Or would it be stiff enough to cut as is if I chilled the pie?

    made this tonight with my 12 month old in one arm. it was really easy to do if u follow it to a T!. i didnt even get any lumps. only thing i would do is reduce the sugar slightly according to my family's taste but its perfect for kids!. this recipe is a keeper :)
