  • Ingredients: 40lbs cooking bananas, 4lbs potatoes, 1 med calabasa(pumpkin), 6lbs yautia, 5 cans chick peas, 2 spanish salad olives, 4 cans evaporated milk, sofrito, 30lbs pernil (pork shoulder), 1gal of vegetable oil , 14 oz annatto seed.
    to make achiote cook oil and annatto seed on low flame until seed release the bright red color.

    Brings back memories of when I was younger and it would be me my Abuela my Titi and my Mom making pasteles using the grater. Good memories of tradition getting passed down.

    This video reminds me of the 1970s, when I lived with mami my siblings humble happy home. Pastelles always. But that handmade machine is made by a Puerto Rican genius! 😍 I love it🎉

    This is comfort food! A family event when I was young. Everyone had their job. My papa made our graters from old coffee cans. He used a nail to make the holes. We were poor, but they were the best times of my life. My masa is a little different and I use banana leaves to wrap. Never tried using parchment. I haven't made these for a few years. I am the last of seven siblings who make this. My eldest daughter is the only one from her generation that knows how to make it. Makes me sad to think it will be lost one day.

      Lo sé, hacemos pasteles en Hawái de esa manera. Plátano verde envuelto en hojas verdes de ti hawaiano (cordyline) y hervido.

    That is how you make pasteles.!
    I love how Mami folded them. And my grandmother always put evaporated milk. My only addition.. I love raisins and roasted red peppers.
    Other than that.. I loved loved how you made them... I would very much love to know where you got the masa machine.

      Hi if you do 10 lbs of green bananas use 4 Planatos, 3 yuca, 3 large potatoes and a medium-sized calabasa

      ​@@susanabushaban2719It tenderizes the masa. It's the only way my Cuban grandma made them. They were the best I've ever had... Glad this family makes them this way. Frankly people out there are selling pasteles that are gummy and hard. Milk keeps them soft and yummy.....

      @@KU-ek6ok it's all about the masa it make sure that it's not too hard or too soft if you have to add more milk or the juice from the meat the masa should slid off the spoon

    30 lbs of pork shoulder for 100 pasteles? Sounds a bit much even if you remove the skin and bones you're left with about 20 lbs of cooked meat because pork shrinks when stewed. Half that amount would do nicely for 100 pasteles. I like to use plantain leaves for the inner wrapping to impart a nice island flavor to the pasteles. That's a great investment having that masa grating machine. Saves a lot of tired elbows and scraped fingers when grating manually. They look very well made and most likely extremely delicious from what I saw the ingredients go into the meat and masa. Classic prep!
