Puerto Rican Pasteles Traditional

  • Puerto Rican Pasteles are a traditional dish made during the holidays! Pasteles are similar to Mexican tamales, but instead of corn masa, Pasteles use green bananas and other Caribbean root vegetables. Instead of corn husks, they're wrapped in banana leaves which lends to the unmistakable aroma of Puerto Rican Pasteles! I vividly remember my mom in the kitchen preparing Pasteles and the time and effort it took making them with a box grater. Today, we use modern equipment like food processors and blenders, making the task a little easier. The real question concerning Pasteles is: do you eat them WITH or WITHOUT ketchup? It's a hot debate! Whatever your preference, Puerto Rican Pasteles are a joy to make and eat! Make it Sabroso!
    Masa Ingredients
    8 green bananas
    1 green plantain
    1 large yautia (white)
    1/4 (2 cups) calabaza, pumpkin
    Water (if needed to help blend vegetables)
    3 tablespoons achiote oil (substitute 1 package Sazon)
    1 tablespoon Adobo
    1 teaspoon Sazon
    1 teaspoon Kosher salt
    1 teaspoon oregano
    Pork Filling
    1 lb. boneless pork loin, cubed
    1 yellow onion, diced
    2 tablespoons sofrito
    3 garlic cloves, chopped
    1/2 cup pitted green olives, sliced
    Hot peppers, minced (optional)
    1 chicken bouillon
    1 teaspoon Adobo
    1 teaspoon Sazon
    1 teaspoon coriander
    1/2 teaspoon oregano
    1 cup water
    Assembly
    Achiote oil
    Parchment paper (15" in length)
    Banana Leaves (12" in length) link below

    Love your recipe and how you spread it out in days to make them. I made pasteles last year for the first time after watching so many different videos on TH-cam on how to make them as living in Cali from New York missed the Caribbean dishes. In total I made about 38 but I did it all in one day and it was hard work! Thank you for sharing! Will definitely be giving it another try for this holiday season! Merry Christmas!

    Thank you for sharing! My grandma used to make these for my family and since we lost her 5 yrs ago no one has been able to replicate hers, but these look identical to hers!! ❤️Definitely gonna be making them! Also we are ketchup on family! 🤣

    I made some pastel's for christmas.that will be our dinner for Christmas.i do love pastel's.my friend never had a pastel in her life.she is a Jewish girl.i gave her one and for her husband.she said Friday she will have it.i do not add to much condiment.i prefer mine less taste best.and I use chicken and meat and diced bacon strips.taste great.i hope she likes it that was my Christmas present to her and her husband.even though she is Jewish.

    Yes. 100%! Yep, you do it right! The way you do the pork is exactly how we roll! We do less green banana and more platano but damn I thought I could smell it for a second there! Haha

    **I make a vegan version filled with "RATATOUILLE" instead of meat, & they are really good. Many different recipes online for ratatouille, I make and use an Italian version with Pitted green and Kalamata olives, no potatoes, for my pasteles.
