Shepherds Pie - The Happy Pear - Vegetarian Dinner

This is a real hearty, wholesome dish that will satisfy most carnivores. It is a vegan dish so if you like cheese or are cooking for a group of carnivores then putting some grated cheese on top of the mashed potato before baking in the oven will make the dish richer!
Sorry we don't have a written recipe for this! We're currently working on an updated and improved version which will feature in our new book (to be launched in Spring 2018)... So please bear with us until then!

It's called a salad on the side. S-a-l-a-d, it's green and crunchy. Try it.

A warm belly hug... I’ve never been able to properly describe the kind of food I enjoy I eating, but now I know - it’s the kind of food that feels like a warm belly hug!
I would advise to put coconut milk (full fat) to the mashed potatoes with a bit of olive oil and a bit of garlic powder. Whenever I make mashed potatoes even if its not for a vegan dish I still use coconut milk. It make the potatoes waaaay creamier its unbelievable! Thanx for the vid!

Oat milk would also make the potatoes very creamy.

Thank you. I did the pie tonight for dinner. Excellent! Fed four people. After it was done in the oven, I put the broiler on and crisped the potatoes a bit.
Recently went vegan, been a bit hard, especially with my two year old that's used too eating meat. I cannot thank you enough for this recipe! 😂 my sons licking the plate and very happy! One of the first meals I've actually been excited about. Can't wait too try your other recipes X

After reviewing all kinds of vegetarian shepherds pie recipes on You Tube, yours appeals to me the most and will be cooking it today for my Canadian Thanksgiving meal. Only change is that I will add cheese to the potato topping.
A great looking pie. I often top a no-sheep shepherd's pie with "monster mash" - half potato and half broccoli mashed with oatmilk and garlic and seasoning. Haven't tried one with tomato but I will now!

Thanks for sharing another recipe guys. I made this for dinner tonight and it was really tasty and hearty. Also it was easy! I hadn't used tinned lentils before but they sure are easy and something I will keep on hand in the cupboard now :)

Guys such a great recipe! Inspired us to cook a nicely made shepherds pie. It was based on your approach, however, added some oven-baked butternut squash seasoned with a whole bulb of garlic (!)
Finished this lovely meal with some chestnuts to give it a seasonal touch
Btw, the tahini mayo is absolutely delicious!!!!

I just made this. Smells, looks and tastes fantastic. I think I underestimated the size of the potatoes i used. I have left over mashed potatoes for something else! My dish was definitely not big enough for all the good stuff. I probably should not have put it all in the dish, lots of spillage. Would have been great to make smaller pies later in the week.

Shepherd’s Pie
INGREDIENTS
4 large potatoes
2 red onions
4 cloves of garlic
1 carrot
1 cup peas
½ capsicum
3 cups mushrooms
Salt
2 regular sized tins of chopped tomatoes
1 can lentils, well drained
2 tsp smoked paprika
½ tsp black pepper
4 tsp tamari
Bunch of chopped parsley
POTATOES
100ml coconut milk
½ tsp salt
Pinch black pepper
METHOD
Pre heat oven to 180 degrees C.
Cut potatoes into small chunks. Place into a pot of boiling water and boil.
Cut the red onion and garlic. Hat a pan with a glug of oil. Add onion and garlic to the pan. Cook for 5 minutes on a high heat.
Cut the veggies then add to the pan. Add a heavy pinch of salt and continue to cook for another 4 minutes.
Add in chopped tomatoes, well drained lentils and paprika, pepper, tamari
Bring to the boil then let it reduce for 15 minutes.
As the dish is reducing, add the parsley.
Take the potatoes off the heat and drain them. Add coconut milk, salt and pepper then mash.
Fill a large pie dish with the filling and top with potato. Bake for 20 minutes.
This is not the recipe they do on this video though...

This is close to what I evolved as a dish except that I have found that it is a really good idea to include sprouts. For some reason it works great in terms of both texture and taste.

TIP: bake a full head of garlic in olive oil in oven (350F for 40 minutes) squeeze garlic juiciness into mashed white flesh sweet potatoes. Add this wicked garlic potatoe mash over-top of your lentil filling in oven dish. Takes this shepards pie to another amazing level of heaven. Enjoy!

My dad died at 69, ate a lot of meat, greasy, unhealthy stuff. My granddad used to tell him, son food will be the death of you. He had stomach cancer, was operated on, was told he had 6 months to live (when he was 60) he went vegan and the 6 months turned into 35 years.....(and he was still going strong if you catch my drift) until the age of 90. He said he wasn't too happy about that the last 5 years of his life :-)

@@thehappypear being brought up in London(with Parents from Kerry)we always had the obligatory Meat on the Table..But I haven't eaten it since 92(I do eat Chicken or Turkey from Time to time)but mostly Fish and Veggie dishes and I'v cooked a Shepherds Pie using Portobello Mushrooms+many other Veggies and u really can't go wrong-And the Food is good!.

Shepards pie is such a brilliant dish to do vegetarian or vegan or whatever dietary conditions you may be working with because it is such a mailable and adaptable theme dish. It’s like a pizza or a taco, there are a million and a half ways to do it and none of them are wrong and any theme can turn out delicious. Totally agree that some char on garlic is a actually a really brilliant flavor. Some people say you should never burn your garlic. I totally disagree.
