    Learn how to make a German chocolate cake like never before! This recipe reveals the secret to the delicious filling that will take your cake to the next level.
    ► Recipe and ingredients:
    To prepare the sponge cake:
    90 g all-purpose flour.
    35 g cocoa powder.
    5 egg whites.
    A pinch of salt.
    Beat until a homogeneous foam forms.
    180 g sugar.
    Gradually add in small portions.
    Beat until the sugar dissolves and peaks form.
    5 egg yolks.
    Add one at a time until the mixture is smooth.
    Stir carefully.
    Baking tray 21-22 cm.
    Line the base with non-stick baking paper.
    Bake in a preheated oven at 170°C for 40 minutes.
    Leave to cool to room temperature.
    Cut off the top layer.
    Carefully remove the center, leaving an indentation of about 1 cm at the bottom and around the edge.
    Roma cherry:
    300 g pitted cherries.
    60 g sugar.
    10 g vanilla sugar.
    Zest of 1 lemon.
    1 tablespoon of lemon juice.
    Bring to the boil.
    Boil for 5-7 minutes.
    30 ml rum (can be replaced by whiskey, cognac or brandy).
    Leave to cool.
    ! You can prepare the rum cherries in advance, for example in the evening, so that they can infuse longer and better!
    Strain and remove the peel.
    Use the cherry syrup for soaking.
    Chocolate cream:
    50 g milk chocolate.
    Melt and mix until smooth.
    170 g butter at room temperature.
    Beat for 3-5 minutes.
    200 g room temperature sweet condensed milk.
    Gradually add in small portions.
    Add the melted chocolate.
    Stir until smooth.
    Add 1/2 part of the cookie.
    Add the cherries.
    Assemble the cake:
    Soak the cake base in the cherry syrup.
    Spread the creamy chocolate cream on top.
    Spread evenly.
    Cover with the top sponge layer (cut to size if necessary).
    Drizzle with cherry syrup.
    Spread with apricot jam.
    Place in the fridge for 1-2 hours.
    Spread the sides of the cake with apricot jam.
    Chocolate ganache:
    40 g milk chocolate.
    40 g dark chocolate (54%).
    70 g whipping cream (33-36 %).
    Melt and stir until smooth.
    For the decoration:
    Chocolate chips.
    Canned cherries.
    Cookie crumbs.

    Oh! Putting the crumb back into your butter cream along with the cherries is an AMAZING idea! I havent even tried this yet and I can see its a game changer!
