It took a decent amount of time to make this and after I just could not get enough motivation or time to continue, I wonder where it could have taken me if I did. That depends on a few things. If it's an adventure bike, then all I would do is make sure that my tires are not too aggressive, would go for 50/50 or 70/30 tires. (Off-road/on road) For a dirt bike, the tires would also make sense. And then I'm not sure whether dirt bikes are fine with going that fast, but in the Dakar they go up to 140 km/h, so I'm guessing that dirt bikes can handle it. The gearing and sprocket ratio is not optimized for top speed, so you would have to alter that if you wanted to go faster. Also make sure your off-road bike is road legal 😉
You would not want to bild your frame out of carbon fiber, because its impossilble to make the bikes feel the same. Steel is the best for street use because its not much heavier because you need less material for the same stiffnes. Steel doesnt break if you put load on and off over a long time.
