MULTIGRAIN BREAD - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making MULTIGRAIN BREAD, this is a lovely recipe and so easy to make. Recipe posted below!
    I'm using 5 x 9 inch bread pans, but you can use any size.

    ( Please wash hands before and after working with dough )
    Ingredients:
    3 Cups, warm water, more if needed
    7 1/2 cups, 100% multigrain flour or 1/2 100%multigrain and 1/2 100% whole wheat
    ( leaving 1/2 cup or flour for working dough during mixing stage)
    1 tbsp, yeast, fast rising or traditional
    1/3 cup, honey, or 2 tbsp sugar
    1/4 cup, melted butter, margarine or oil, extra tbsp for hand, pans and bread tops
    1 tsp, multigrain
    1 tsp, sesame seeds
    1 tsp, flex seeds
    1 tsp, pumpkin or sunflower seeds
    1 to 1/2 tsp, sea salt
    Extra butter for pans to spread on top of bread and hands for forming dough.
    Method:
    - In a small bowl, add yeast, warm water, honey or sugar and stir together let set for 5 minutes or until formed.
    - In a large bowl add multigrain flour, 1/2 tsp sesame seeds, 1/2 tsp flex seeds, 1/2 tsp pumpkin or sunflower seeds and sea salt, adding 7 cups of flour leaving 1/2 cup flour for working dough.
    ( leaving the remainder of seeds for over top of dough in pans final stage. ) use all 100% multigrain or 1/2 multigrain and 1/2 whole wheat.
    - Start to mix using a wooden spoon or kitchen aid, add room temp or melted butter, yeast mixture with honey and water, kneading dough with hand and spoon.
    (This is the ONLY stage you can add more warm water if needed, or continue mixing and folding dough inward.)
    - Continue mixing the 1/2 cup of flour until dough forms a dough ball and all flour is away from side of mixing bowl, kneading for 10 minutes to activate the yeast and form the dough ball..
    - After forming a ball of dough, cut an opening into top of dough, mark the sign of a cross on the top of dough. ( Optional ) Cover with lid and towel. If you don't have a lid cover with parchment paper and a big towel or blanket. Keep in a warm place in the kitchen this will make it rise faster. ( Viewers Tip: Place bowl in the oven with the LIGHT ONLY on and set the timer for 20 to 30 minutes until risen.
    - After the 20 to 30 minute are up, remove towel and lid then knead your dough again, cut another mark in to top of dough, cover and wrap with a towel and place in that warm place again.
    - After 20 to 30 minutes is up, " DON'T DEFLATE DOUGH BEFORE CUTTING INTO SMALL DOUGH BALLS " put a little butter or oil on your hands and shape into small balls x 3 for one loaf bread or one long piece of dough. Oil loaf pans adding dough to each one, brush top with butter and add extra seeds of choice. Cover pans with parchment paper and big towel and put pans in a warm place to let rise until double about 20 to 30 minutes.
    - Once dough has risen, pre-heat oven to 350ºF. Put dough in oven and set timer for 30 minutes or depending on your oven.
    - Check bread to see if it is baked, once bread is baked, remove from oven and removing from pans unto a cooling rack, add a little butter to the top carefully and cover for 5 minutes to soften top of bread.
    - Spread butter all over warm loaves, cover and let cold to room temperature before bagging. If you bag the bread before cooling it will buildup moisture in bags.
    Serve with butter, jam or molasses over warm bread, only keep one loaf out at one time freeze the other two loaves in a freezer bag for another time.
    "Multi grain flour is made up of many different grains of choice of course. Usually consists of 7 or more ingredients, including wheat, oat, barley, brown rice, flex seeds, buckwheat and quinoa. Grain all of these ingredients to a find texture and add with whole wheat flour to make up the difference needed for making this recipe"
    IF YOU WISH TO USE ALL 100% WHOLE WHEAT BREAD THIS IS THE INGREDIENTS YOU WILL NEED AND FOLLOW THE METHOD TO HOW TO MAKE IT ABOVE
    INGREDIENTS IF YOU USE ALL 100% WHOLE WHEAT FLOUR
    7 CUPS 100% WHOLE WHEAT FLOUR, add 6 1/2 to the bowl keeping 1/2 cup to mix to form a dough ball.
    2 TBSP MULTIGRAINS
    2 TBSP FLEX SEEDS
    2 Tsp sunflower seeds or pumpkin seeds
    2 Tsp sesame seeds
    1/4 Cup cracked rye
    1 Tsp sea salt
    1/4 Cup butter, margarine or oil
    3 Cups warm water, more if needed
    1 Tbsp Yeast, fast rising or traditional
    1/3 Cup Honey or 2 tbsp sugar
    You can use seeds or grains of choice for extra.
    Follow top method to work dough, and enjoy.

Need to know how much percentage of which flour you have used. That will be of help for me to gather different flours and mix them to make a multigrain flour. TIA!

    Looks great I went shopping trying to find muti grain flour but couldn’t find any so what should I add in place of multigrain but

      Hi and thank you for your message, I bought the flour a our local grocery store. I did see some available on amazon and if you go to your local grocery store in the organic dry goods you may find some there as well. If you can't find multigrain use wheat and extra grains from the 12 grain cereal or loose. :) Bonita

But I haven't made any before, this is a no yeast bread and it takes lot's of time and patience to make it. I work with yeast and quick affordable breads, that don't take a lot of time and fuss. The recipes are posted below all our videos to follow and ofcourse the video is a great tutorial to follow. We use hard red spring wheat in our Whole Wheat All Purpose Flour to ensure a rich, nutty flavour and texture. Whole Wheat flour is a source of fibre as it includes the bran from the wheat grain.     Hi Bonita. Happy Palm Sunday. I’ve never made homemade bread of any kind. Your Honey Multigrain looks Wonderful and I can imagine the taste as I do love homemade breads of all kinds. I would like to try homemade yeast rolls first. I really like to do canning and with this Coronavirus going on now is a good time for canning. Here in Dallas, Texas we are staying in. It’s bad here.     Made this today! Somehow I did 4 loaves! Turned out so great! So tender and light and wonderful. First time I've done the three dough pieces as a loaf, but I can see the advantage of doing that. I'll be doing the rye bread next! Loved this recipe!!

    Hello from British Columbia. I really love your teaching style and have made this recipe a few times. I love it but was wondering if I could change the flour to add some white flour. I'm trying to lesson the wheat flavor so my kids will eat it. Right now I'm using half whole wheat and half 13 grain flour. Any ideas Bonita?

      Hi and thank you for stopping by and for making and enjoying our bread recipe. I'm so glad you are trying to make it so your kids would eat it. Okay! When measuring the flour amount if it's the whole wheat you like less then replace one cup with white. If you like more white replace one cup of white flour with one cup of the multigrain flour. So you will have equal amounts of multigrain, whole wheat and white flour all in the one batch. Follow the recipe for the adding and mixing you are just replacing some flour. I hope this make sense to you and place follow up when you make it. Enjoy Bonita

    If we over work the dough does it result in a tough loaf? I would hate to waste my ingredients for the bread to turn out impossible to slice. bread making ingredients are now very expensive.. just flour is more expensive than I've ever seen it!

      Hi Mary, Thank you for your message and for stopping by, I agree totally the cost of food prices and living is very expensive. If you wish only make a half a batch first if you are making bread for the first time and not feeling comfortable with the method. I've been making bread for over 40 years and I don't think about the results only the bread making when working with dough. This is a lovely bread and very tasty and soft, let me know how it goes for you and follow the video or recipe and enjoy. :) Bonita

    One humble suggestion. I'm 66 y.o. and cook everything from scratch. Whole grains, loads of veggies and healthy proteins. I also drink a lot of water - just... thirsty, I guess! The result of all this is that my doctor told me to eat more salt! My sodium is low because there is so little prepared food in my cupboard. For this reason, I never use sea salt. Iodine is essential to health and sea salt doesn't have it. Perhaps you could consider suggesting ionized salt? Maybe sometimes?
    Regardless, I LOVE your channel and please count your good fortune that we aren't neighbors! If we were, I would constantly be pelting you with requests to be your kitchen helper! I'm annoying that way!
    Love your accent! Reminds me of my blissful childhood in the woods and water of Minnesota. Ja, youbetcha.

      Oh my thank you so much, that is wonderful. I also wish you well with levelling your sodium and small steps on adding salt into your diet and you will get the sodium levels more stable. Then once week have a meal that got a little more sodium then you would normally have. I thank you for sharing this with us and if anyone wish to use a regular table salt in our recipes it would be fine. I will keep your suggestion in mind.     Thanks for the recipe, I made this yesdtday and it worked out fantastically. I was wondering if this recipe can be doubled or tripled. If so, should I double and triple the yeast or keep it at 1 tbsp and just increase rising time?

      Hi Arlene: Thank you for stopping by and for your question, anytime you make more baking then you need put what you don't need in a freezer bag, vacuum seal it or in a freezer container. Then you can freeze it for when you are ready to eat it. Maybe separate only what you need in each freezer bag. Enjoy and I hope this helps. :) Bonita

      Hi Blayne: Thank you for your message and for stopping by, if you use your kitchen aid use just for the mixing. Then remove the bowl from the unit and form into a dough ball, cover and follow the other method for the rest. I hope this helps, the mixing is the hardest for the workout, but the rest is pretty simple. Enjoy and stay safe...Bonita

    Bonita, thanks for your video ! I have a little tip time for you ! when using honey . . spray the measuring cup first with a little cooking spray and the all the honey will release without having to scrape it out . . .

    Bonita, I woke up this morning knowing I needed to make bread for the next 3 to 4 weeks. I have never used your recipes ever. I made the white, whole grain and oatmeal breads already. It's 10am. I am on a mission to make the whole wheat and raisin before noon. It's supposed to get up to 30 degrees Celsius over the next 3 weeks and higher which is why the need to bake today. Thank you so much. My mom in my opinion is the best bread maker ever. I have never made her recipe successfully ever. Something is always not quite right. This bread is perfect. It tastes amazing. I just can't thank you enough for such an amazing recipe. From Alberta to Newfoundland, thank you. 🤗

    I tried your whole wheat bread twice and it turned out really good. I wanted to try this but I don't have access to multigrain flour... Can you please guide me which flours with proportions to make a multigrain flour for this recipe

      Hi Naeem: Thank you so much for your lovely message and for making our whole wheat bread recipe, if you can't find multigrain flour you can substitute with extra grains. For example: IF YOU USE 7 CUPS 100% WHOLE WHEAT FLOUR, add 6 1/2 to the bowl keeping 1/2 cup to mix to form a dough ball. 2 TBSP -12 GRAINS flour ( bulk ), 2 TBSP FLEX SEEDS, 2 Tsp sunflower seeds, or pumpkin seeds, 2 Tsp sesame seeds, 1/4 Cup cracked rye, equal to 1/2 cup total. Then 1 Tsp sea salt, 1/4 Cup butter, margarine or oil 3 Cups warm water, more if needed 1 Tbsp Yeast, fast rising or traditional 1/3 Cup Honey or 2 tbsp sugar You can use seeds or grains of choice for extra. Follow whole wheat bread recipe method to work dough, measure the about of extra grains equal to a half cup to equal the full amount of 7 1/2 cups of whole wheat and grains, I hope this makes sense and enjoy.       @@NaeemKhan-qq8ul Yes that will work and add extra grains if you wish and when working your dough make sure the texture of the flour at the first stage in sticky and its working all the ingredients together before folding it together and forming a dough ball, all the best with your bread and do follow up any time. :) Enjoy Bonita
