There used to be a taco truck here in Kenosha that specialized in Al Pastor and they were the best tacos I’ve ever had. It’s hard to find good ones due to the labor involved but now I know how to make my own, thank you much Cowboy Kent👍🏻

Kent, your cat image - earlier today here in North Texas, a squirrel decided to get on our back porch and climb windows. Our cat decided to try to get the squirrel, but couldn't get through the window. She managed to drive the evil squirrel away! You also reminded me of an office accident when I was working part time 4 decades back. Got one of those "paper spikes" right in my chin when I was bending over to help move desk. The wife of branch manager of the spot I was working at was an RN, and she actually insisted upon and administered a tetanus shot at the doctor office where she worked. And it was gratis, something probably not available any more. This looks delicious, but dang that is a lot of work! Perhaps for our block party, but that is usually crawdads as the main featured dish. But dang, I'd eat that dish in a heartbeat!

You can also use annato paste, Mr. Rollins. It gives another kick on the flavor, kinda spicy, but delicious! And also, the color, a beautiful red tone just like your shirt! Love your videos!
Just needs some salsa verde on there. I didn't find out about the traditional method until recently (the pineapple). Thank you for teaching these recipes!
*FACT!* Lebanese immigrants migrated to Eastern Mexico and taught the locals how to cook these up! This is pretty much a Mexican Gyro...and it is WONDERFUL!!!!!
The concept of tacos is not Lebanese or a gyro as it far predates it since BC and the marinate for adobada is not Lebanese, only the the way its cooked on a machine that is stacked up which was invented by the Turkish around the 18th-19th century which was brought by Lebanese, but the ones that are closer to the originals are called Tacos Arabes

Reminds me of roasted lamb on pita bread. Gyros, I used to eat them when I was stationed in Germany. Couldn’t find good Mexican food or BBQ anywhere.

You could make the sauce the day before. That would cut down on how much you need to do in one day.
