    I ate those tacos in Mexico across from Del Rio, Tx. I watched them shave that meat off (cabrito) and served it with garnish and fresh-made tortillas. best tacos I ever ate.

    Dear Cookie, your recipes and dishes are as marvelous and scrumptious looking as ever, but what I really enjoy about watching your videos is that wonderfully liberating and outdoorsy sense of freedom that your outlook on life exudes. A sobering reminder that one doesn’t need a fancy car, a fancy home, a fancy job, or a yacht full of dough to cook up something meaningful and pleasurable in life.

      Never in my life had I've seen someone try to claim food as "cultural appropriation." If so, then they're wrong. It's mostly either a case of cultural appreciation, and the beauty of cultural diffusion.

    There used to be a taco truck here in Kenosha that specialized in Al Pastor and they were the best tacos I’ve ever had. It’s hard to find good ones due to the labor involved but now I know how to make my own, thank you much Cowboy Kent👍🏻

    Reminds me of roasted lamb on pita bread. Gyros, I used to eat them when I was stationed in Germany. Couldn’t find good Mexican food or BBQ anywhere.

    I have never been interested in cooking. I've always thought that if it was food just for me, there are plenty of options for premade meals, or just something simple like a sandwich. But you Sir have turned me onto a whole new way of looking at food, and how to share and enjoy it with others. This is the first time I have ever bought cookbooks and I can't wait to try them out and share them with family and friends, thank you!

    Kent, your cat image - earlier today here in North Texas, a squirrel decided to get on our back porch and climb windows. Our cat decided to try to get the squirrel, but couldn't get through the window. She managed to drive the evil squirrel away! You also reminded me of an office accident when I was working part time 4 decades back. Got one of those "paper spikes" right in my chin when I was bending over to help move desk. The wife of branch manager of the spot I was working at was an RN, and she actually insisted upon and administered a tetanus shot at the doctor office where she worked. And it was gratis, something probably not available any more.
    This looks delicious, but dang that is a lot of work! Perhaps for our block party, but that is usually crawdads as the main featured dish. But dang, I'd eat that dish in a heartbeat!

    You can also use annato paste, Mr. Rollins. It gives another kick on the flavor, kinda spicy, but delicious! And also, the color, a beautiful red tone just like your shirt! Love your videos!

      The concept of tacos is not Lebanese or a gyro as it far predates it since BC and the marinate for adobada is not Lebanese, only the the way its cooked on a machine that is stacked up which was invented by the Turkish around the 18th-19th century which was brought by Lebanese, but the ones that are closer to the originals are called Tacos Arabes

    My all time favorite taco discovered them when we lived outside San Antonio in Hondo! Ain’t nothing better that comes on a tortilla!

    Did a double take when I saw this! In the 1960s, "Al Pastor" was the owner of the (pre NHL) Buffalo Bisons minor hockey club. Took me back to great memories. Now I must try this recipie!
