- Sausage recipe:
Ingredients:
4 kg pork shoulder
3 kg of bone and skinless flank
1 kg neck
2 kg of beef neck
100 g of pressed garlic
4 g marjoram
20 g ground pepper
15-20 g sweet Hungarian peppers
2 dkg of salt per 1 kg of meat
8 g of crushed cumin
1-1.5 l of water
For 10 kg of meat about 12 m of intestines

As a teen, mid 1950's, I helped my mother make sausage from our own pigs. We smoked the sausages and hams. Wonderful stuff. We had real pork rinds not the puffed up snack of today.

As most of french people I like sausages of any sorts : thin, or fat, smoke or natural, with any kind of spicies as pepper, hot or smoked paprika, garlic or onions as well ! You are very lucky to have such tool to do yours sausages by yourself ! Congratulations !

As an former sausage maker this warms my heart. I whould suggest u put a plastic bag over the piston before using it tho. Makes for a way easier cleaning :)

The finished project was really cool. But, I've never seen so much meat in my life, except at the grocery. My family just aren't big meat eaters. Looks likes something the Amish would have. Great job on the restoration.

Another great restoration and video! While you were filling the sausage carings, something said to me "Get those sausages to a smokehouse!".
