- In this episode of Keep it Canada, Matty heads to New Brunswick to hang out with his close friend and spirit animal: Chef Jesse Vergen.
Jesse takes Matty to visit his family's driving range, where he's built an incredible roadside BBQ restaurant. We also meet with Cornel Ceapa, a man who has devoted his life to sturgeon and the decadent caviar they produce.
Matty then takes his mother and aunt-who grew up in New Brunswick-for a giant pile of fried seafood. At the end of it all, Jesse and Matty respectfully slaughter a lamb on Jesse's farm to serve to Matty and Jesse's families, along with Cornel and his wife.

Yeah you have to try smoking pig BBQ, my favorite place around here by far. Actually I was there for some brisket when these two came over after slaughtering. New Brunswick is easy to get used to for a Scandinavian, climate is very similar.
Antti Kahkonen New Brunswick seems a lot like Maine but not shitty and depressing. I've got family in Prince Edward Island so I'd like to travel up through that area sometime soon. I'll make sure I hit up these places when I do

the professor of sturgeon, I met him at toronto wine fest. He is super nice guy and really knows his stuff. PhD in Caviar no kidding. He has lots of scientific paper on this subject of farming sturgeon. His caviar is top notch but his smoked sturgeon meat and pate. YUUMM

It's good to see people get reconnected with the act of slaughtering for food. It defines us as humans. We kill animals to get food. Teaches you to be thankful for the food. Thats why you always see south east asian country eat all types of internal organs. I'm a Chinese muslim living in malaysia btw. We always try to maximize our food and not be wasteful in any way.
I especially like the thanks he gave the sheep. While preparing halal meat, we say a prayer and give thanks to Allah. In a way, we're all not so different.

You blew my mind when you made "Rauppie Pie" My people come from close to Yarmouth N.S. And all my great aunts made this, but perhaps a bit differently. They used to actually "grate" maybe 30 lbs of the potatoes on a piece of thin metal with thousands of sharp points made by hammer and nail, held by a wooden frame . . . perhaps 2 feet long. They would then squeeze the "meat" of the potato by hand in Irish Linen to remove the liquid, salting it as they went to avoid discoloration and pound it down. This resulted in about 1/2" of pure starch remaining in the bottom of the bowl . . . which I'm told the women used for ironing; and the liquid was used by the men to make booze . . . back in the day. They would boil a chicken with onion, celery and carrot, and use the stock to reconstitute the potato "meat" to the same level in the bowl, and then alternately layer the potato mash and chicken in a highly buttered enameled roasting pan.
Sometimes this was made with chicken and pork, and there was also a seafood version.
It resulted in a thick coating on all sides of basically potato crust with a thick center of meat and thick potato mush, and was served with homemade applesauce and sour cream. And lots of salt.
Fun fact: One of my great aunts didn't like the hard part of squeezing the mash by hand . . . and came up with the ingenious idea of sewing tubes of Irish Linen that could be tied off . . . and placed in her modern washing machine on high spin to express the liquid.
I don't think anyone in the family ever went back to her house for "Rauppie Pie" after they found that out.

Huge props to Matty on that lamb, he's absolutely right that its necessary for him to experience as a chef, and I have massive respect for him on following through with it.

***** good caviar is fucking delicious especially incorporated into dishes. most people who say it isn't haven't had it.
***** ***** Actually they really loved the caviar, you can ask them!!! We ate probably 500 g
together after the shooting! And caviar is not an acquired taste it is really pleasant. The reason why people may have bad experiences with caviar is because sometimes they are not real sturgeon eggs and also it is a very delicate and sensitive to temperature product and if not kept cold can turn bad quickly (hence it would start having a strong fishy taste - a good caviar does not have any fishy taste, it is creamy, buttery, nutty etc)! Love matty , i didnt know he was from newbrunswick. I live directly across the river from carters point where the sturgeon farm is , really awesome to see matty do this show , hes got good pride for our beautiful province . Keep it up matty boy! . P.s you should come back in the fall and catch some 30 pound stiped bass on the river and cook that up !.

I should've smoked it then she wouldn't have found anything and I'd have been able to finally relax in her home! Damn!" But she was angry because she found a poppy seed from a strudel on her counter. One renegade poppy seed. I'm with her re: touching walls, though. I hate when people do that! Your mom is beautiful and charming! And she's obviously so proud of you.
