    매번 빠르게 움직이는 카운터 직원분들만 봤지 저렇게 빵만드는건 첨봐서 신선함. 빵맛이 달라지지 않는건 다들 기계같이 반복해서 반죽작업을 하고 저울을 빼지않고 쓰는 거 때문였나봄ㅜ
    그리고 진짜 여기 댕친절해서 자주 갈 맛이 남

    현업 경력 8년째 빵잡는사람인데 분할작업 저정도면 실무자 맞습니다. 빨리 하려면 더 빨리 할수있겠지만 분잡스럽기만하지 큰 의미없어요. 니들 해보면 저덩어리 분할끝내는데 두시간 예상합니다.

      @@왈왈-x9r 그쵸. 빵 해보신분이면 알겠지만 4~70g 내외 소분할이면 한두번만에 잡을수있지만 저건 식빵이라 그람수 딱 맞추려면 저렇게 되는게 정상입니다. 오히려 저렇게 차분하게 하는게 정상이라고 봄..

      @@왈왈-x9r 빠른편은 아니예요. 평범한 재빵사가 그냥 평범~하게 하는정도 잡담도 좀 해가면서 노닥거리면서 할때 속도예요. ㅈ됐을때는 저거보다 빠를거예요.

    전공자로써 무게 한번에 맞추는거 어려워요...진짜 숙달되고 몇년씩하신 장인들도 딱딱못맞추는건데...너무 뭐라고 하지마요..저거 진짜 잘하시는건데...왜 알지도 못하면서...뭐라하시지...

    아니 대체 분할할 때 한번에 딱 해야하는게 무슨 상관이야 한 두번 더 하더라도 레시피에 맞게 딱 정량을 맞춰서 하는게 훨씬 더 중요하지.....

      거 미안한데 전공자들은 한두번 하면 무게 감으로 얼추 맞아요... 그리고 무게를 무조건 정량으로 하는것도 아니고 오차범위 2~3g차이나도 상관은 없어요 근데 영상에선 많이 차이나잖아요..

      지나가던 전공자 인데 반죽 정량 엄청 중요합니다 1g 이라도 다르면 맛이 달라지는게 많아요 근데 그냥 자격증만 따려고 학원 한달만 다녀도 이정도면 이정도 되지 않을까 하는 감이 있어요 모든 곳이 이러는 지는 모르지만 저는 그 감으로 처음부터 모든 반죽 분할 다 해놓고 남은 짜투리 반죽으로 부족한거 채우고 많아서 덜어낸건 짜투리 반죽으로 씁니다
      일부러 비디오에 쓸만한거 넣으려고 리듬 뚜따뚜 하시는거 같아요

    방구석 제빵사들 많네 베이커리 4년차 직원입니다 많은 반죽 분할 시 저렇게 분할하는 게 더 빠릅니다 하나 올려놓고 분할하고 하면 시간 더 많이 잡아먹어요

      오징어 먹물 때문이 아니고 반죽 할 때 넣은 되게 물러보이는 반죽 있잖아요? 그게 반죽 물로 씻은 거(?)인데 글루텐이 붕부해서 다른 식빵보다 반죽에 글루텐이 풍부해서 쫄깃해지는 겁니다. 저거 많이 구으면 겉은 진짜 바삭해질듯

    The end when they cut it open was so anticlimactic, just a hollow piece of bread oozing too much cheese. The process was incredible tho, loved watching it.

      Bread is a sourdough, it’s coloured with squid ink.
      As for the rest of the ingredients... cheese?

      Obviously some plastic cheddar, I think I saw some feta, probably some mozzarella for cheese pull purposes, I think I saw something that looked like young Gouda but most cheese looks like young Gouda to me and the crumble that went with the almonds might have been parmezan. This is by looks alone and I'm in no way a cheese expert so don't take what I say for granted.

    재료가 진짜 아낌없이 들어가고 오븐에 들어가기 직전까지 보통 정성이 아니네요😳 작은 식빵크기 하나에 3-4천원의 가격대가 이해가 안됬었는데 이 영상보고 조금은 납득이 되네요 만드시는 분들의 수고로움도 고스란히 느껴지고 되게 조심스럽고 정성스럽게 빵을 빚어내시는 느낌이에요ㅎ.ㅎ 이 영상보니까 타르데마 식빵 꼭 한번 사먹어봐야겠어요..🤩

      They put squid ink in pasta, too. So interesting to look at! It has a slightly irony flavor, but not enough to make me averse to black pasta lol

      @@iguana3287 뭔소리야 ㅋㅋㅋㅋㅋ그래서 저분이 분할하는데 몇시간이 걸렸고 소비자한테 피해주는 행동을 했음? 그냥 니들이 하는 얘기는 직장 상사들이 텃세부리고 괜히 꼽주고 시비터는 거로 비유해야죠 무슨 피해받은 소비자가 컴플레인 거는 걸 비유하고 있어 .. 그쪽은 사회생활하다가 별 이상한 사람들이 트집 잡아도 그러려니하시길

    Did anyone else notice how quiet the kitchen /work area was??? They all knew their job and how to do it. Not one movement was without purpose. They worked so efficiently. And not one wasted morsel of cheese or bread dough...

    분할로 태클 하시는 분들은 5그람짜리 저울 쓰셔서 그런듯.. 저분은 1~2그람 단위 저울 쓰셔서 저렇게 하시는거같은데 분할은 두개가지고 하는게 훨씬 빠르죠 ㅋㅋㅋㅋ 대량으로 하는 빵집에서 하나 무게 맞추면서 언제 분할하나요 ㅋㅋ 물론 그래도 2~3번만에 분할하는게 맞다 생각하고 여러번 무게를 재긴하네요 ㅋㅋ

      Squid ink. It is only used for coloring and does not affect taste.
