Watching thrse videos on Korean food, I have come to realise that Koreans are really into the combo of (bread-like) pastry with (whipped) cream, in all shapes. :)
I make croissants which is what this bread is. But... I don't have that very nice bread flattener/rolling machine (meaning, I'll always have slightly more odd shaped dough after I'm done making the layers). And I never thought to use a ruler to cut off the ugly edges on the "foundation" once I've made my layers. It would make the final product look much cleaner and consistent. Also, to make the layers more distinct, I didn't think using a squirt bottle would help with both binding the layers as well as keeping the layers distinct. I love it! Getting ideas from these videos on how to do better. However, making good croissants takes about 3 hours. 6 hours if you are not 100% dedicated to doing it the entire time. Because the butter starts to soften as you roll and layer the dough, you have to put it back in the fridge for 20 minutes between layers. I can usually get in "2 folds" before I need to put it back. I usually do folding sessions 3-4 times to end up with 64 to 256 layers (depends on how well the dough has kept together - butter starts to "leak" through the dough if you fold too many layers). Hope that helped solidify your decision or change your mind. Making croissants is probably the most time intensive food I make (unlike smoking meat which can take many hours, you don't have to tend to it as much as making a layer bread).

I've had these types of things. The dough is quite different. It feels like layers of soft bread piled on top of each other. The bready part is quite distinct. It doesn't really taste like croissants.
I really like the concept of eating healthily every day for a month then spending one day that month to eat whatever you want for 24 hours. This would be on that list. Edit: I am also aware you can do this weekly but I have found that to be too consistent for my liking. Once or twice a month works fine for me. I don't like sugar all that much except for the bit I put in my coffee (comes with the Oat Yeah Oat vanilla creamer) and the fruits I eat.

What was in the starter dough? Is it yeast or sourdough based leavening? They're croissant like baked in a Pullman bread style pan and filled like an eclair.
I watched again very carefully and I think I see them add yeast at the 00:15 mark. So the dough they add at the being is a yeast based starter meaning it's more like a croissant and less like puffed pastry.

Judging by the burns on the arms of the person taking those buns out of the oven, some longer heatproof gloves would go a long way.
