    Made it in my semi for dinner. Sitting in a drop yard in Atlanta.
    No whisk. Did get a little scramble. But excellent recipe, just dumped spices. Truck made beef bone broth and 3 yolks with 1 pint bb and 1 lb gb. Came out great and I have a second serving in the pint jar I had the bone broth in.

    Looks delicious.. love the egg yoke technique!! 😋 I just made a carnivore pita chip that would make an excellent frito. I’m working on a keto frito pie recipe but this recipe would work great for a full carnivore version of it😊

      Cinnamon really is a great spice to put in any dish. Just enough so that you cant tell its there. I use it in a lot of things.

    I just made it!! 👍👍 This will be my go to chili recipe from now on! My husband is not carnivore and doesn’t tolerate tomatoes and he loves it! So easy to make! Hardest part is separating the eggs.

    Chris I've been doing keto and carnivore for about five years. Making chili for over 50 years I've never thickened it the only thing that gives chili the carbs are the carbs in the tomatoes and the beans I am going to make chili and just serve it over my riced cauliflower. Very proud of you.

    Just made this today! I used 2 lbs venison and 1 lb ground beef, turned out great!! Will adjust the spices a bit for my husband. I had some Teton Farms polish sausages, cooked a couple, cut them up and poured chili over them, topped with cheese I shredded myself, took Ash’s cue 😉 Another great carnivore recipe, thank you!!!!!

    All week I've been wondering how you were going to make chili without tomatoes. I really couldn't understand how you could. This is brilliant! And these are my kind of spices. I am not a lion diet gal. Can't wait to try it! This would be the perfect recipe to use the kind of ground beef that has organ meat in it. I hate liver but I found a mixture and the spices would definitely hide the liver flavor in that mix. Okay. I'm really excited to try this!

    I like the idea of all your spices in the chili. I'll try your technique. It's interesting that I always toss the raw beef into the liquid too. One thing I do different is add a crock pot cooked, shredded chuck roast and its juices to my pot before I add ground beef. We had six boys, so I made my chili as meaty as possible. I used great northern beans in those days, since I'm not a fan of kidneys (but that's beside the point lol). I made it with the chuck and burger when I started keto, too. I haven't made chili in a long time, but when i do, I will still add the shredded chuck roast and the juices. It's incredible!

    Such a great technique using egg yolks to thicken the chili, I learned to use cinnamon from reading ingredients. Sally K Norton is a big help for me, I went through oxalate poisoning like she did, she has great suggestions for spices, I will be able to enjoy the flavor of Thai curry again with her suggestions and the same with chili, oils and extract’s. My body will tell me yes or no when I wake up in the morning, pain or no pain. 😂

    This guy is the real deal! Outside the box thinker making life better for all of us low carb folks. Chili is one of my favs but I steer clear (I’m keto) because the servings have to be small to stay under my carbs. This chili is great, I didn’t even miss the tomatoes! This will
    be our go-to! It even leaves us with carb margin to have a low carb cornbread alongside without blowing our carb limit! Great job, once again. I’ve made the “rice” “mashed potatoes” and now the chili all wonderful. Thanks Chris!

    I make a brisket chili (no ground beef, just brisket cubed into small pieces) that I LOVE, but it is always thinner than I want. I will try the egg yolk technique next time!! Thanks for the idea!

      Once eggs have been tempered they WILL NOT scramble when reheated. So not a worry.

      That’s what I was thinking too as I’ve not had that issue, but I certainly don’t doubt there’s a reason I may not be aware of. Haha. Perhaps if they’ve been partially tempered but not fully cooked they set up more after? Not sure. 🤷🏼‍♂️

      @@ChrisCookingNashville once eggs have been tempered, and any amount of heat does it, the protein strands are unwound and become untangled and they do not get tangled again because they are in suspension with the fat in the yolks and thus will stay smooth.

    I made this chili last night and couldn't believe how delicious it was! I have made your pancakes several times and also used them as a vehicle to eat pork and beef roast..so good!     Hey Chris, I made your chili recipe again today and decided I’d try using dry egg yolk powder in place of the regular egg yolks. I had gotten a bag earlier that was just sitting in the cabinet waiting for an opportunity! I followed the directions on the egg yolk powder to reconstitute them. Then, I just followed your instructions. It turned out great, and I think the egg yolk addition makes this a very satiating chili.

    Cut some mozza cheese into little cubes about 2x2cm or so or little balls and drop them in the hot chilli just before eating. Let them melt just a little for a few minutes and then chow down. Its freaking insane the texture of the chunks half melted but still semi solid with every bite. This is how I always ate soup before going carnivore. When you do it just right the cheese doesnt have time to become stringy and this is the key to the texture. Unripened squeaky cheese curds are perfect for this.

    Woohooo, Chris!!! I was just doing a TH-cam dive for carnivore chili -- thank you for this video! Kudos on the cinnamon; been doing that for years, and I get so many weird looks when I tell people I add that in, but it's a "warm" spice, so I keep doing it. Can't wait to try this when we get some cooler temps finally! (Incidentally, I found out that my Gebhardt's Chili powder doesn't have sugar, soooo I'm going to keep using that, too!) Way to go!!!👍

    Just be careful reheating this later. LOW AND SLOW. Otherwise, you'll scramble those beautifully tempered eggs. You don't want that!

    This is perfect to mix with your carnivore mashed potatoes since it leaves a lot of egg white for something else. Or maybe some sour cream. Or maybe make it really thick almost sticky with some beef gelatin to put in a carnivore batter type tortilla. Or a real low-carb tortilla made of nixtamalized corn flour (Golden corn flour Masa Harina) (nixtamalization removes the antinutrients and generally cleans up the flour)

    I just made this. For meat I combined one pound venison burger with one pound breakfast sausage. I didn’t use the egg yolks because I have never even heard of “thickening” chili. The first few bites I wasn’t sure about the cinnamon but it is absolutely delicious. Definitely making this for the guys at hunting camp next fall.

    That's basically a soup, I was not expecting that. I'm in the UK and I've only ever had it thick-ish with kidney beans, usually with some veg too, served on rice. I'm definitely going to try your recipe!

    I use egg yolk powder/beef collegen peptides (not jelitin), and it works great. This would be a great "sauce" chile for hotdogs, if hotdogs were a real food. Haha. Great video - zip and to the point.

    Chili is a winter staple at my house but I’ve been wondering how I might fit it into my carnivore lifestyle. I appreciate your recipe. I generally have no need to add anything to thicken my chili. If you simmer it long enough it’ll thicken on its own or at least thick enough for me. My problem is I must have onions and jalapeño in mine.

    Made this chili today, good and spicy and delicious. It reminds me of the chili sauce I enjoy that comes on a fat boy cheese burger. Which is exactly what I was hoping. I’ll be portioning this batch and freezing it for use on my keto fat boys. You just saved me $30 a week now that I can make them at home.

    I like to brown my ground beef first and then add the dry spices to the beef before adding any liquid to the mixture.
    And here is where I move away from carnivore, I add pickled jalapeños.
    I will try the egg yoke addition to my next batch of chili.
    I've never added any type of thickener to my chili before
    I really miss my tomatoes 🍅 way more than anything else.

      Bet those pickled jalapenos will add that bit of acidity, too, that some have mentioned missing with the lack of tomatoes. Easily keto and as carne "+" as works for you. Thanks for sharing the idea.

    Because I've never liked beans, my mom used to make chili with refried beans because I could tolerate them if they weren't whole beans. It made a very thick chili that was almost like chip dip and we'd often eat it with chips made by frying store bought corn tortillas. It seems like the thicker version of this might be pretty close to my childhood chili. Now I just need to figure out chips (although they're totally optional).

    I’ve never added any eg flour to thicken chilli, even when I ate flour. I just reduce any liquid off, but it’s drier than yours. I’m not carnivore so I use an onion and sometimes tomato, cook the spices with the onion in fat…I use the same as you plus fresh chillies if I have them, and dried ancho chillies, I like the smoky flavour. I used smoked paprika too. I do cook the meat in stock, I like it soft. Final ingredient is grated chocolate from a block of 100% cacao 😄 That actually thickens it a bit, but the flavour is fabulous. Probably not allowed on carnivore though! I like the idea of eggs though, and adds nutrients.

      I usually get and use unsweetened chocolate. Luker brand chocolate from Colombia is my favorite but ordinary baking chocolate without sugar is okay. Cocoa suffices, though.

      I would try gelatin in my chili! After it cools maybe it'll gel a bit to serve cold on a taco salad for Keto, no tomatoes for me. But, lettuce, grated cheese, black olives, maybe a piece of diced red pepper, green onions, sour cream! HOT sauce for those that must... With the last hot drought we had this year, here in South Texas, I have to have cold foods sometimes! 🤠 Thanks Chris (I need to do Carnivore for me, but Keto for my Husbznd.)

    I'll have to try the egg yolk thing. My current thickening method is to simmer it long enough to drive the water out, and mix a tiny dab of xanthan gum in it. It is good, but the texture isn't perfect.
    Mine also uses some tomato paste and Rotell, which I want to get away from transitioning from Keto to carnivore.
    Your really low spice quantities make me laugh, but I've had someone say that it would be a war crime to serve my chili to POWs due to how spicy it is.🤣

    Great recipe! I had some shredded chicken in the refrigerator and poured some chili over it. That was a nice way to switch it up for leftovers. And by the way, it is even better the next day!!

      Hello! Thank you so much. 😊 I think so, but tempering the egg yolks and adding them to thicken it will need to be probably your last step and it may take longer in a crock pot. Still the same basic process but probably longer and more stirring at the end to incorporate them so they don’t scramble after pouring them back in.

    l just ordered the hot dog bun mold to try your bun recipe, and l am excited to try your chili recipe for chili cheese dogs!! l was wondering if adding xanthum gum would work instead of all the egg yokes? l would prefer not to have that much egg whites to figure out what to do with.     I can see your Cincinnati heritage in the cinnamon and oregano. Now you just need a plate of your carnivore pasta to put this over and then top it with a mound of shredded cheddar and you have a Cincinnati chili 3 way. Definitely going to make this and have one of those in my future. (Actually, I’ll probably add chopped onion too and have a 4 way. 😂) ❤️ you Tiffer. Momma Bear.

      Can’t wait to make this! I always used a little tomato paste but will leave it out. One thing I will add is diced celery for crunch (my mother’s recipe). Never thought of egg yolks for thickening. Love chili in Fall too! Love your recipes (as does everyone 😂). Saturday is a great day to do!

    I have to try this. While I have found some Keto chili recipes that are okay, all of them have more carbs than I really want in what seems like a very small serving. This looks like it would make a good-sized serving with less carbs and lots of taste.

    After working for Wendy's (14 years...) and making countless batches of chili I was a bit skeptical about how you were going to make chili without tomatoes, peppers, onions or depending on taste beans. I should have guessed eggs! lol Personally, I would have browned the meat and as onion doesn't bother me I'd probably add that but otherwise I wouldn't mind trying this.
