    This is almost italian/mexican/russian/american. Pizza/taco/prioshki/manwich (sloppy joe) vibes. Those are among my favorite comfort foods, so Feteer is definitely in my wheelhouse. Must make!

      It has a bit of lahmacun in it too, I think that's an Armenian dish, basically the same thing but the dough is not as thin and you don't close it, instead cook it open like a pizza.

    This is reeeeally similar to Sicilia “Scaccia”, the dough is basically the same and I think it actually came from Feteer at this point.
    Love to see how the Mediterranean is culturally so interconnected :)

      Your Sicily was rulled by Arabs in 800AD somthing and was named Emirate of Sicily

      ​@@jeffbezozss I know, that's exactly what I'm saying - there have always been dominations and circulation of ideas and cultures (e.g. Cous Cous is considered a local dish in Sicily, not a foreign one) etc.
      The pizza dough, for example, comes from the Arabian way of making bread, and so on.

    Bought the book and made this! Was a little tricky getting the ratio of filling to dough right and folding the dough, so my first attempt broke apart, but my other ones worked and were very tasty!

      chop one big onion into slices and fry them to be gold and let em cool on the side
      boil the pasta, standard ones are the panne and spaghetti with 2 tbs oil and 1 tsp salt ,once it is cooked put it on the side
      when it comes to the black lentil ,clean it first then boil it on a low heat , we dont want it to be mashed just cooked ,. keep it on the side as well
      rice: must be Egyptian rice and aslo Egyptian pasta noodles similar to spaghetti but thinner, 1 tbsp ghee and fry those Noodles till its brown then add thhe rice mix them together then add the water with 1tsp of salt .the water should cover the rice by 1 cm and low the heat for a slow cooking
      salsa or our red sauce: in a big bowl ,1 tbsp mashed 2 garlic cloves,salt black pepper and cumin ,fry it in 3 or 4 tbsp oil for 1 min till u smell the garlic then add the fresh tomatoe juice with 1 tbsp tomatoe paste and let it cook for 45 mins
      once u got everything cooked
      mix them and enjoy

    Uses Turkey to keep it "lean"....proceeds to add 1/4 cup of butter and a 1/2 cup of olive oil.

      @@joalvarado8506 no it isn't. If you used good beef, you wouldn't need to add as much extra fat. Plus beef just has more flavor. Sure it's just my opinion, but turkey is trash...especially ground turkey.

      @@Mrbink01 I’ll simplify the math for you and pretend that each ingredient has the same amount of calories.
      1 (butter) + 1 (oil) + 1 (beef) = 3
      Now let’s pretend that turkey has half as many for the sake of the thought experiment.
      1 + 1 + 0.5 (turkey) = 2.5
      Assuming you don’t change how much fats you use, turkey would result in an objectively leaner final product. Yes, beef is traditional and tastier, but turkey is leaner. That was the point.

    Looks really tasty. I don't have a stand mixer, cast iron nor an oven.
    But I do live in Indonesia and the closest thing we have to this dish is Martabak. Martabak Mesir specifically.

    This is very similar "martabak." I mean the food itself likely originated from Middle East & migrated across Asia too (especially SEA region).
