How to make Guamanian red rice - achote rice recipe from the island

  • This is how I cook my red rice. Hope you find it easy to make.
    Ingredients: 2cups rice(wash), 1 bag achote seeds, 1/4 onions, 2 tsp. Olive oil, salt.
    Enjoy.

    Was stationed in the Navy on Guam 1976-1978, 28 months, Lived by the War Dog Cemetery until moving on base, NavCAMS, M’s Steak House and LAN’s Shed House favorite places … Food Was Delicious…

    Hello from Texas yes I am a Guamanian My mother sister and Brother all born on Guam . My mother was a world war 2 prisoner. Very long story . Red rice has been in my family since I was a small child. The seeds were hard to find but as time went on we were able to find them . My mom taught us girls how to make Red rice a Guam dish . My mom added peas bacon onion cut up sausage pork Cut up
    pimentos salt pepper and the red water from the seeds. Everything I name was chopped small pieces. Christmas time barbecue Thanksgiving everybody wanted red rice. Mom is long gone now he died in 2004 at 82. Even today if somebody calls me ask me to make Red rice I do . I hope one day I can come to Guam I have many family there I don’t even know .       I'm also Guamanian and my grandmas Brother was in the military for 27 years and he fought at Vietnam. Hafa Adai!

      Your recipe sounds very delicious. I'm from California, but married to a Chamorro, and I have been to Guam, it's beautiful. I highly recommend you go to see where your family is from.

      Hafa Adai! My father born in Guam and grandma was in the prison camp too under Japan occupation. I love to see the traditions kept alive.

      That’s the same way my auntie would make hers 🫶🏻 it’s my favorite red rice, especially during holidays ( thanksgiving and Christmas) not much people I know make it this way anymore :(

    This is how I like my red rice,not sticky well done,how long did you allow the liquid to boil for before adding the uncooked rice ?

      When it's rapidly boiling then you can add the rice.

    What kind of rice do you buy? Long or short grain? Where can you buy the acote seeds in CA?

      You can buy both at any Asian market.

      You can also purchase them in most Hispanic Food Markets listed as, "Achiote" in either seed or powder. When I left CA in 2012, the seed version were getting very hard to find.

    How much water do you use is it like 2 cups of rice equals 3 cups of water

      Rafael Fuentes 2 cups rice to 2 1/2 water

      @@mhagasworld5839 So, the achoto water is 2 1/2 cups, right? My two Sisters are the experts in cooking red rice but not me. Though I love eating red rice, I still have to master it by experimenting. Sometimes it comes out too watery or not enough achote water & sometimes it comes out right. My Sisters tell me the steps & the eldest told me to make sure the achote water is a little bit more than the rice. It depends on how many cups of rice you are cooking. It may seem easy but not for those of us who are still learning to make red rice. Its 4th of July today & hubby wants red rice so I'm going to make another attempt. I hope it works out. The video didn't mention how much achote water to put after stir frying the onions in the oil. Oh well.....RS (San Diego, CA. USA)

      2 1/2 cup water if using long grain rice. If regular rice just 2 cups.
