    Extra Tip:
    Since its acid,
    If you don't have cream of tartar, use a small squeeze of lemon juice,
    It does work, though!

      I'm not sure if baking soda has the right acid, but if it has a significant amount of acid, then it probably will. I don't recommend it though, it will probably spread out the meringues.

      Super late to the convo, but baking soda is alkaline, not acidic, so you won't get the desired effect.

      bicarbonate soda is a BASE not an acid. There is a big possibility that it won't work

    4 egg whites
    250 grams caster sugar
    Cream of tartar or you can use a squeeze of lemon
    Pinch of salt
    1/2 tsp vanilla extract
    Bake in the oven for 25 mins at 150º C / 300º F.
    Turn the oven off and leave it in the oven for 1 hour to slowly cook it

    Besides following these wonderful tips, just remember that it takes a bit of patience and practice. Many people get frustrated and either overwhip or don't whip enough and simply give up. Just be patient and practice, practice, practice following all of these tips.

      The first time I made meringues, it turned out wonderful. The second time I did it, I over whipped it, so it failed.

    If anyone is looking for the recipe she used, here it is:
    • 1 pinch of salt (or 1/4 teaspoon
    cream of tartar. You may also use
    1/4 teaspoon lemon juice or 1/4
    teaspoon vinegar - not as effective)
    • 4 egg whites (154 grams)
    • 250 grams of superfine sugar (or
    blend granulated sugar in a food
    processor for 30-60 seconds)
    • 1/2 teaspoon vanilla extract - optional
    *Tip:* if you'd like to adjust the recipe, make sure the egg to sugar ratio is about 50 grams per 1 egg
    *Crispy on outside, soft on inside:*
    Bake in oven at 150°C (300°F) for 25mins, then turn off oven and leave in oven to cool for 1 hour.
    *Evenly cooked & crispy throughout:*
    Bake in oven for 100°C (200°F), then leave in oven to cool for 1 hour.

      It's 200°F and 100°C, not the other way around :)

    This was explained really well. Usually even after following the recipe in baking videos my stuff doesn't turn out as it should. Because as Martha Stewart said baking is a science. This video tells us what to do and what not to. So it seems very well done.

    I 1/4 the recipe and divided it into 3 different bowl and added caramelised biscuit in one, chocolate chips in another and Oreos in the last one. ITS AMAZING

      Why? You can add all those after it cooks. You risk ruining the cooking time doing that.

    I am from India and i had this in one of the bakery here. i dint know what is it that time and i loved it. they had added cashews which gave crunchy texture. loved it. now i feel its easy to prepare too.

      Enam I just made my first batch using a $7 hand mixer from Walmart and they turned out for me, but mine were crispy all the way through, I think I just cooked mine for too long.

      Enam use a balloon hand whisk. Takes a while but still same outcome.

      i used a dollar tree hand mixer and they turned out great, you really gotta make sure you use that cream of tartar if your hand whipping it, and you have to beat it until its thickening then add a little sugar and beat it for a while then add a little bit more then beat it again, it takes forever but in the end its worth it

    its 1/4 cup sugar to each egg. if 3 eggs use 1/4th-1/3rd tsp tartar. after sugar is added (should take 7-10 minutes whisking it in) put tsp vanilla/lemon/raspberry extract. if its still grainy you continue to whisk until smooth between fingers. if you want the texture the way shes making it; 300f for 25 minutes shut oven off and keep in for 35 more minutes. do not open door during entire time. then crack oven and let cool. if you want them hard the whole way through; 200f for 1.5-2 hours shut oven off and crack door to let cool for about an hour. if you do not have parchment paper use aluminium foil, do not use wax paper

    Btw if you dont have Tartar cream you can use same amounts of lemon or vinegar!
    Then it makes lemon meringue!

    I made half batch of these with 2 egg whites and used dark vinegar instead of red wine vinegar and they turned out great! I did 200 degrees for 60 minutes and then left them in there for a another hour to cool. I made about 6 cookies.

      G.K Oakes My apartment already had a tiny kitchen that only has a stove and a microwave oven. But sadly no regular oven :/

      lifehacker123 Is there no room to put an in-wall oven? Not sure how much space you have. You can get a low end one for about 350-400 USD.
      You can also get high end toaster ovens which go on the counter for about 600 which can do baking, but are not good for casseroles or roasts.

      BarakaObama2012 Sadly my whole kitchen is about 2 meters wide and that's it. The only thing that I could do is get a mini oven and replace my microwave oven with that. But I have no clue how good those are

    As for the acid, you can also simply use some lemon juice. Just keep in mind that it adds a bit of flavour.
    If you're making meringue that isn't going to be crispy, for something as lemon-meringue pie, then adding a bit of honey helps to hold the shape of the meringue longer.

    hi Jemma! love your videos! how long can i leave meringue batter in a piping bag? and how long can i leave piped meringue out before baking?
    just because i don't have enough room for the whole batter to bake at once.
    another question is if i have a basic oven that has heat that comes only from the bottom, is baking good meringue even possible?

    So, mine’s been liquid for a while, and now it’s more liquid. Never reached the solid point so I guess i over beat it. How long do you beat it for?

      The whites until the peaks are soft.
      All of the sugar it will thicken and go glossy.

    Thank you for the tips! The temperature and timing do not work for my oven.. they get kind of brownish-golden, but they are not cooked enough in the middle and on the bottom.
    Do you preheat the oven?

    Putting it in a bag and piping and giving it a quick twirl with the hand-size blow torch adds the litt extra this needs.

    I just made these - they are perfect! I naughtied them up a bit by dipping the tops in melted chocolate, and then sprinkled crushed up peanuts over the top.

    wow looks so prettty, the merigue are crisp outside and chewy inside, yummy :}
    i ever tried to make it before but with different recipe, and i cant made it because the meringue so sticky on the paper when i finished baked it, what should i do?? :(
    anyway what the different between meringue and pavlova?
