The Octave series has DT and team putting a single barrel into ex sherry (I think) eighth-casks.. half the size of quarter casks. The liquid to wood surface ratio is so much higher they often only sit for 3-6 months iirc. I have an Octave Caol Ila that's great.
This sounds like something I’ll need to look for. Just had my first Glenrothes two days ago at my local whisky bar down the street - it was Glenrothes 18 year, all in first fill sherry casks. Wonderful, loved it. Obviously different notes from the bourbon cask, delicious.
As soon as you mentioned butterscotch, I knew you going down the Glenrothes route. That IB sounds like one to be on the look for ! Thanks for another great vid.
