Garlic- 1 1/2 tbs
Big onion- 3 Medium
Black Cardamon- 3 nos
Cardamon- 5 nos
CinnamoN- 1 big Pieces
bay leaves - 1 nos
Cloves- 4 nos
Ginger powder- 1 tsp / Ginger (Finely chopped) - 1 tbs
TOMATO - 2 Medium
Lamb( Mutton) - 1 Kg
Turmeric powder- 1/2 tsp
Kashmiri chilli powder- 1 1/2 - 2 tbs
Coriander- 3/4 - 1 tbs
Salt( according to taste )
Garam Masala powder - 1/2 tsp
Fennel Seeds powder- 1/2 tsp
Hot water- 2 1/2 - 3 Cups
Natural colour
Black Cumin seeds- 1/2 tsp

Mutton Rogan Josh looks lovely ma'm. Just to add to what you mentioned in the video, actually there r 2 versions of mutton rogan josh in Kashmir. The muslim style and kashmiri pandit style. This is the muslim style that u prepared. In the pandit style they do not add onion, garlic or ginger, but dry ginger powder (saunt) is added. Usually for the intense colour they use the bark called Ratan Jot, it has to be infused in ghee. Mawal flower is also used. Rogan Josh is an integral part of any Kashmiri wazwan hence the prime cuts of mutton is used for the same.
