    ROGAN JOSH
    Preparation time 10 minutes
    Cooking time 40-45 minutes
    Serve 2-4
    Ingredients
    For Rogan
    2 cups Water, पानी
    2-4 Coxcomb, मावल फूल
    For Tempering
    2-4 tbsp Mustard oil, सरसों का तेल
    2-3 no. Black cardamom, बड़ी इलायची
    4-5 Black peppercorns, काली मिर्च के दाने
    2-3 Cloves, लौंग
    1 kg Mutton (with bones), मटन
    Prepared Curd Mixture,तैयार किया हुआ दही मिश्रण
    Salt to taste, नमक स्वादअनुसार
    ⅓ cup Prepared Rogan, तैयार किया हुआ रोगन
    1 tbsp Red chili paste, लाल मिर्च का पेस्ट
    1 tbsp Brown onion paste, तले हुए प्याज का पेस्ट
    For Curd Mixture
    1 cup Curd, beaten, दही
    1 ½ tsp Fennel powder, सौंफ का पाउडर
    1 tsp Dry ginger powder, सौंठ
    5-6 Saffron strands, केसर
    1 tsp Coriander powder, धनिया पाउडर
    1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
    ¼ tsp Turmeric powder, हल्दी पाउडर
    For Garnish
    Coriander sprig, धनिया पत्ता
    Process
    For Rogan
    In a handi, add water as required, Cockscomb, close the lid and boil it for a while.
    Strain it in a bowl with the help of muslin cloth and keep it aside for further use.
    For Tempering
    In a handi, add mustard oil, once it's hot, add black cardamom, black peppercorns, cloves and let it splutter.
    Add mutton and saute it for 6-7 minutes or until tender on medium flame.
    Add prepared curd mixture, salt to taste, close the lid and cook it for 8-10 minutes or until the mutton is tender.
    Add prepared rogan, red chili paste, brown onion paste and let it simmer for a while.
    Transfer it to a serving dish and garnish it with coriander sprig.
    Serve hot with rice.
    For Curd Mixture
    In a bowl, add curd, fennel powder, dry ginger powder, saffron strands, coriander powder, degi red chili powder, turmeric powder and mix it well.
    Keep it aside for further use.

    You are the only Indian Chef who truly understands and respects Kashmiri culture by making it as authentic as it can get!
    And btw praan is basically banana shallots which is a fusion of garlic and onion. I’m a Kashmiri Pandit and I feel the first Roganjosh was perfect as it was truly Kashmiri hindu Roganjosh!
    I have been cooking since I was a kid! It blew my mind when I got to understand how such simple ingredients can taste so divine!

      I am sorry to say it is not authentic Kashmiri rogan josh as Kashmiri Pandit don’t add onions . It is always only curd base .

    Yes Kashmiri pandit rogan josh gravy doesn’t use Pran/onion paste. Instead is beautifully cooked using only saunth(dry ginger powder), Kashmiri red chilli powder and hing. That’s the delicacy of Kashmiri cuisine, where the ingredients are celebrated! Thanks chef for this one❤❤

      I think ranvir explained why kashmiri cuisine dont have fresh ingredients. What he wanted to say was that traditional kashmiri cusine dont have fresh ingredient is because historically fresh ingredients were not readily available so kashmiris got resourceful and started drying fresh ingredients so that they could be used year around.

    This is the difference between any other cooking channel and an expert chef's cooking channel. RB has the ability to show the beauty of the place, the mindset of people, the culture and everything through their simple dishes. I loved the way he accepted in the start of the video that it's not possible to create the actual recipe but he tried to create one very close to the actual one.

    Oh my God, I have never seen a chef making the real Roganjosh without adding Zeera and all. Real Roganjosh recipe is such a delight. Making a real Roganjosh with such a passion and using Waza in between just made my day ❤

    Having stayed in Srinagar for almost 3 years,have enjoyed many delicacies. I too cook a few favourite ones for my family and self. Besides Rogan Josh(without curd), Mutton yakhni , Al yakhni, Tabakmaas , Laal nadru and Kadam monji are my absolute favourites.☺️

    Trami and Sarposh is basically meant for 4 people to eat in the same plate. It isn't usually this small in size. With the advent of modern ideas, newer generations demanded separate plates like this. Hence, Trami became this small in size (meant for one)...

    Dalcha, is an Indian lentil-based stew originating from Hyderabad, Telangana, India. Its origins may lie with a similar middle eastern dish Harees which is more of a gruel with cooked meats. Primary ingredients are lentils, can be Chana Dal or sometimes Tur dal. Vegetables or meats, both chicken or mutton may also be added to the stew, so if mutton is added it will be called a mutton dalcha. Bottle gourd is another key ingredient in a Dalcha. It is traditionally served with the rice dish called bagara khana

    Ranveer Brar : One of the nearest Rogan josh i have ever seen, being Kashmiri I completely understand and get what u did.. very few know Kashmiris dont use onions much specially in non veg..Thank you for making this ..i have seen rogan josh with coconut as well and felt furious.. and that too in USA

    I learnt to make it from a Kashmiri friend and this is the exact way! Thank you chef :) Here in Kerala, it's difficult to get Ratanjot, still manage to find from Ayurvedic shops. The Ratanjot oil made in cold pressed coconut oil is very good for the hair ☺

    Thank you for sharing this reipe, Sir. I searched for coxcomb but didn't get them in nearby indian grocery stores. So i made it without coxcomb. It turned out delicious. my husband loved it.     Kashmiri rogan josh is good but it may not taste great for everyone. Chef Ranvir did an excellent job to show the original recipe. I personally like the mutton to be soft like Lucknow so real Rojan Josh is not for me. Food recipes get adapted as it changes place based on many factors like Climate, People choice, lifestyle etc. I wouldn’t dishonor other rojan josh recipes as they are correct too but they are not kashmiri version which is fine. Me personally like mutton bhunai instead of cooking by boiling as it provides that roast flavor which is not possible here

      Unhone shaayed ye baat pehle bol Diya tha aur ye bhi bola tha ki wo authentic version nahi bana rahe he, balki wo easily Ghar me bana paye aaisa wala version bana rahe he.
