In Jamaica we put the Pimento wood in the fire. On the grill we use green woods such as Coffee Stick,sweet wood and Rod wood. The Pimento wood at full length is not so straight and is difficult to Jerk on especially when Jerking a hole Hogg commercially. All you need for the Jerk Chicken is the Jerk Seasoning.
That's ridiculous. You're ignorant on this subject. To suggest that smoke from real pimento wood, leaves or berries is not needed and that only jerk seasoning will suffice is asinine. I've been to Jamaica, and they do indeed use pimento items when cooking. Really dude, all you need to do is look right here on YT to see that in Jamaica there is more to jerk than the seasoning. lol!
garfield lawrence I'm literally Jamaican. Jerk is not technically jerk unless pimento wood or leaves are needed. Chicken marinated it jerk seasoning and just cooked in a gas oven is just jerk spiced.
@@jessicadaley623 - You can still add a few pimento wood chips or flakes in an oven. Just wrap in foil and poke a few small holes so it won't catch on fire

For Chicken: 250-275 degrees for 2.5- 3 hours. I also like to cook "Offset" : Food on one side of the grill and heat on the other. Low and slow keeps the chicken juicy until the reach 250-275
