Thanks, Cheryl! I make one that has coriander seed, peppercorns, star anise and cinnamon stick in a bouquet garni. Might have cumin, too. I'm someone who can't eat cilantro leaves, but I love ground coriander. I haven't made any this year, best get on it!
I do it every weeks. A delicious cream of vegetables...carrots, green peas, celery, spinach, cauliflower, broccoli, (my fave), red beans, chickpea, cabbage, sweet potato, onion, garlic, tomato,mint,, coriander, parsley etc etc, , and, of course, my precious olive oil..I freeze it in tupperware and consume a bowl of my soup every day.. I'm Mediterranean...I can't live without my vegs.🥰
I am dancing on the ceiling over this video! I’ve just tried canning carrots harvested from my garden this past fall. Nobody enjoys canned carrots. So this is a great way to hide them! ❤

I bet a pinch of ginger or a few parsnips would also be excellent in this as well - especially since modern carrots aren’t as tasty as the olden kinds.
Now THIS would be the soup for me! Unfortunately, my Mister thinks coriander/cilantro tastes like soap. I guess I’ll just have to find a restaurant somewhere in the world that makes it. (I know! The Cheryl X Restaurant, in Ayrshire, Scotland!) 😆
Erin, give it a try anyway. I think cilantro leaves taste like soap. But I love ground coriander, and I make a carrot soup which contains it and I don't notice it at all.
Fresh coriander/cilantro is an acquired taste, but the dry coriander does not taste like the fresh. I used to hate the fresh stuff but now like it. Trained my taste buds to like it by adding smaller amounts than called for in a recipe.
Hi Cheryl from Spain. It looks a wee bit peely wully and not a good vibrant carrot colour. Carrot and coriander is Alejandra's next soup which will be made this weekend to take over from the pumpkin soup which I will finish for my tea tomorrow.
