    Because you don’t continually change the angle every two seconds, your videos are so much more enjoyable. Obvs, they are incredibly informative. But I adore the fact you keep the camera rolling. Thank you!!! Fantastic info. Never knew I could freeze them before I make whatever I make. Super helpful.

    Rachel never ever think we don't like you all going to the cabin. I love being able to see the wonderful cabin video's . I wish I was able to spend time out in the woods and by the river away from the rat race. Not being able to I do it throw you all. 💞 What a beautiful harvest on tomato's .. Love you channel.     Grew potatoes for the first time ever this year. Partner and I said over and over "holy crap!! These are SO much better than store bought!!" LOL Hard not to compare when you first start out I guess. He also said "we are NEVER not growing these again." Love your videos, learning so much. Thank you!!!! #nomoreprocessedfoods

    Thank you for all your videos Rachel. I made your spaghetti sauce recipe a week ago and love it! 21 1/2 quarts from my 18 qt roaster. I did use my kitchen aid fruit strainer to remove the seeds and skins after I cored them. Cooked all day was the best batch so far! Named the recipe "1870s Homestead Spaghetti Sauce" ! If you have time when you make your tomato soup, would love to see a video and recipe on that! Thank you for sharing with us all! 😊

    This freezing method has been a lifesaver.. thanks so much for showing us. I work full time hard to process as ripe but freezing I can do until my time allows me to process.
    I am actually making sauce as we speak, love the methods you share along with drying skins for powder. It's zero waste & the roaster has been a total game changer. So appreciate all the video! 🙏

    Todd and Rachel, I found your channel this spring and look forward to your videos so much. Y’all have been such an inspiration to me to, as Jessica Sowards says, “Use my waiting room as my classroom”, and I’ve started canning like a wild woman using your tutorials. I’m a lifelong wanna be farm girl who lives in a deed restricted neighborhood near Houston, am growing veggies everywhere I can squeeze them, and am about to get illegal backyard chickens again in a couple of months. While I wait for my long dreamed of farm to come true, I’ll keep plugging away and use your garden and productivity as my example. I do have to say, I love your idea of a 7th year Sabbath rest, but cringe to know that I won’t have your videos spurring me on to homestead greatness! God bless y’all and thank you for working so hard to make a difference to me and so many others!❤️

    This was a wonderful format for a video! I enjoyed the flashbacks to the original videos. I love having spaghetti sauce an pizza sauce as well. I have canned chili base, bbq sauce and ketchup before, not sure I would do that again. I think it would be good to mention, for newbies, that adding the zucchini will lower the ph level and might make the sauces a candidate for pressure canning. I think I’m going to get some ph strips myself to test things to decide how I want to can them.

    Tomato envy! I would love to have half of your freezer of tomatoes! My pantry is getting to a point of "Where am I going to put Rachel's relish!" I binge watch your videos and as I am thinking of what to do with produce I just go to You Tube and look up your videos as I know you will have one on what I need. Roasted Tomato soup is on my list of canning firsts. Thank you & Todd for all the great adventures on farming and sharing them. Enjoy your year off gardening.     An escape for your own mental health is smart. Sometimes the best thing you can do is take a break, recharge and then keep soldiering on. So many of us aren't aware of their own mental well-being and when to take a break whether it's a few minutes or a week. We all need it.

    Yes! I love that quote. Commercially produced goods actually change the pallet. They're engineered to be hyperpallatable from flavor to mouth feel. So when you switch to real food the pallet adjusts. After a while, commercially produced things are way too strong for most.

      I find commercially produced fruit and veg lack flavour. They are produced for looks, and for staying "fresh" for long periods (ie not fully ripening) and for profit.

    I would love to see how you make your tomato soup. This is my first year canning tomatoes and have only done a small batch of basic tomato sauce but I will be trying spaghetti sauce and salsa for sure this year. I find myself wanting to do it all but reality hits me and reminds me to take small steps! Thank you for sharing your homestead with us, I absolutely love your channel !!

      I would too. Have tried many tomato soup recipes and not thrilled with any. Have tomatoes in my freezer to make soup with this winter.

    You totally deserve all the credit for me making my spaghetti sauce in my roaster this year! Not only did it make my life easier, but I had NO scorching, and an improved yield! I got the tomatoes ready after dinner and let them cook all night in my roaster, then canned them up the next morning. They also had a better flavor.

    It is now 10:00 a.m. and I have 15 pints of beef just about to come out of the canner. I just love the color of the tomatoes. I grew yellow and orange tomatoes for the first time this year, and of course red ones, and they just bring me joy. Beautiful harvest.

    Thank you for the tip freezing the tomatoes! Processing them will be better when the weather cools down.

    I enjoyed how you went from present video to the past when you were actually processing the stuff on your shelves. I am going to take your advice and process my tomatoes in a basic format and then go from that into multiple other sauces. My tomato crop has not done well this year but I’ll get tomatoes from a local farmer and still fill the pantry. Thank you for the great ideas!

    Our tomatoes didn't come in like they usually do. By now I'd be on my 4th batch of sauce. I use my crockpots, no babysitting it. I was laughing so hard when you opened your freezer....so happy to see I'm not the only one that plays freezer jenga!!!!

    My ex-inlaws were stationed in Italy for awhile and my ex-mother-in-law would put carrots in her pasta sauce, whatever carrots she had went in. You would not believe how good those carrots were cooked in that sauce. That’s not normalizing, that’s stating a fact.

      I watched an Italian grandmother make her tomato sauce, and she used carrots for sweetening instead of a lot of sugar. So when I made my own tomato sauce, I tried it, and the sauce was fabulous! And it adds nutrition!

      I always add carrots to my sauce, I roast the tomatoes, onions, celery ,garlic,and carrots then blend it all before adding oregano, parsley and rosemary

      I made sauce with half bushel of tomatoes, 4 lbs of carrots and only half cup of sugar. It was delicious

      Southern part of Italy uses carrots. My great grandparents were from Sicily. A little bit of sugar only if no carrots were not added, and if the tomatoes were too acidic. Grandpa was from northern Italy, they didn't add carrots.

    You don't have to justify your use of time - it runs away from the best of us! That's part of what makes freezers so useful. I've had some venison mince in my freezer for quite a while that I've been meaning to get to - but at least it's fine in there until I have a chance to get to it.

    Actually you saved me so much when I found out you freeze your tomatoes until ready to can. I didn’t have enough to can and I wanted to do them all at once. Plus I just didn’t have the time. Now I can process tomatoes and enjoy the process when I have time.

    I add zucchini, yellow squash, carrots to my tomatoe sauces. I use stick blender to mix it all before canning.

    Your tomatoes are beautiful!! We’re so cool at night they are still green- had a problem with a ground hog eating our tomatoes- put up an electric fence- it works! I’m steaming my tomatoes in my juice steamer. Then I run the seeds and pulp and skins with some of the juice through my blender and then heat and can.

    I put peaches in the freezer today, Rachel. We were traveling home from Florida and stopped
    in Georgia at a small Farm stand, and purchased a few pecks to put up. Our garden is over flowing with produce .
    Tomorrow canning cowboy candy and starting hot sauce…like you lots of tomatoes to deal with too.

    Your tomatoes look beautiful! I'm planning on a much larger garden next year. To be honest, I've never grown yellow tomatoes. I have had a garden most of my nearly 65 years. I have my seeds for next year but I just might have to spring for some yellow tomato seeds. Your pantry looks a lot like mine. I have more full jars than I have cupboards and shelves.     You will be adding more to your pantry with the produce coming this season. I am new to canning and have 2 questions. You seem to have a lot of canned foods on your self already. How long is the shelf life of things processed last year? Do you organize your shelf with older things in front? I am 70 & always gardened enough to eat fresh veggies in current year. I love the idea of water bathing the appropriate veggies in order to have them later and to keep pantry stocked up. I admire that you guys have jobs and maintain a homestead.

    I don't normally comment but want you and Todd often. I added zucchini for the first time this year and didn't tell my family but had them tast it and they loved it even saying it was better than last year. So 150 pounds of tomatoes and 6 gallon bag of shredded zucchini gave me 64 quarts of sauce where last year 100 pounds of just tomatoes gave me 32 quarts. Thank you for the tip. Also I hope your daughter in law has a good sense of humor... :)

    I also freeze my tomatoes. I use the 2.5 gallon freezer baggies. They are so much easier than a bunch of gallon baggies.

    Thanks for sharing so many ideas on preserving tomatoes. In FL my harvest isn’t until later, so I have time to play with recipes using farmers market purchases starting in November. I hear how tired you are, and understand your need for a sabbath year. You should be well prepared to get through that year, and hopefully whatever challenges the economy brings!

    I have made many different type salsas/recipes. Honestly, my most requested salsa is the Mrs. Wages salsa I made. I and my daughters and friends seem to like the Mrs. Wages the best and it's so easy, that's what I make. It's also good made with canned store-bought tomatoes in a pinch in Winter. We like the thinner Mexican restaurant style salsas the best too vs the thicker chunkier types.
    I'm now more of an "ingredient" canner. I used to make pasta sauce, etc but now just end to can tomatoes or tomato sauce, purees or paste and then use that to season whatever I need it to be. I think it's much easier when you have a ton of produce coming in from the garden at once.

    I adore you 2 and have learned so much from you both.
    My Cowboy Candy is amazing. Your recipe changed to what I had in my kitchen. I grew Cubanelle Peppers, so sweet and had Anaheim Peppers plus Jalapeños. I used everything you did except one thing! The sugar I used was Imperial Dark Brown. OMG! OMG! What a difference. Candied Cowboy Candy. You gotta try it.

    Yes… I freeze the tomatoes as they come in, also most of the zucchini. I also freeze all the berries for later processing. Then I process as I have time after harvest. Thank the lord for big freezers!!

    Today 8/27/22, I did Salsa, and added some Mango to it. Last year I added some peaches to it. Not a lot, but a little. Letting it cool over night. I had a bushel, but only used 1/2 for the salsa. I got 1/2 Roma tomatoes and 1/2 regular tomatoes. I think I am going to can up the other part to use for soups and chili. I have already done BBQ sauce.

    Rachel❤️ I love your channel. I’m tending my first garden this year. It’s small so I’m freezing tomato’s until I get enough to make something with them. We’ve decided that I will use them to make your pizza sauce. My husband and I also own an off grid camp and the plan is to use the sauce for Dutch oven pizzas over the fire at camp. I’m on the hunt for a nice cast iron Dutch oven with the lid ( I watched the video the other day where you and Todd successfully made one at your camp). Your channel is such an inspiration to me. Funny, that I am also lucky enough to work from home since the pandemic started and can multi-task preserving the harvest. #lifeisgood

    Yes, always put grains in freezer to kill off eggs that are always in the grains and flour. We always do three days before storing and sometimes leave the flour in there if we don't need to space to extend the shelf life. Unfortunately, bugs don't get "in" the grains later, there are in from the start. Don't even ask about the allowable percentage of bugs in peanut butter. I make my pizza sauce on the fly from a can of tomato paste, water, little acv, Italian spices, garlic and onion powder and a little stevia, It's so good. That way I don't have to can it myself. I can use tomatoes for other things. I'll be doing several large jars for the fridge of roasted tomatoes, basil and garlic packed in olive oil. Amazing during the winter to add to a salad or pasta or just with mozzarella. Would love a video on tomato soup. I did my enchilada sauce already and have spaghetti sauce. I'll freeze dry my salsa because I want to try to see if it taste fresher.

    i love all your recipes and am in tomato harvest and carrots,potatoes and peaches mode; just canned some blueberry pie filling and there are not enough hours in the day feeling..... get overwhelmed with the harvest season every year. Also made canned coleslaw but still have 3 large purple and green cabbages to do down.

    This is a very timely video for me. I've NEVER grown so many tomatoes and different types of cherry tomatoes so it's left me scratching my head on what to do with them. After I made my ratatouille and salsa, I've been bagging and freezing. Thanks for the tips!

    Oh while I'm at this point in video 😃 I freeze my flour too but if you put into large freezer bags and store flat it will give you more room. It's also easy to grab one to refill kitchen container when needed.

    Also my floor looks the same as I did a lot of canning before I got sick

    Thanks for showing us all the ways to use tomatoes. I didn’t see any straight up diced tomatoes. I can and use a ton of those. I would like to try your pizza sauce

    I too have to freeze tomatoes, but because I don't have a stove right now. Microwave and crock pot don't cut it. Hopefully soon.... I look forward to finding your list of videos.

    I saw that salsa video so when I was making mine this year I had 1or 2small zucchini and I chopped them up put in my salsa and it's great..

    Hi Rachel! Your home canned sauces remind me of my first encounter with homegrown, preserved food. My teenage best friend's Mom, Miss Alyce, made the best homemade pizza with her sauce. Sadly, I'll never be able to duplicate it, but it's my goal, and the most savory memory! Blessings 🌻
