  • A few days ago, I had to go out into my garden and harvest all my tomatoes - even the green ones. Blight has set in, and I don't want to lose what's left of this crop. But what do I do with two giant baskets of green tomatoes? In this video, I'll show you my tip on how to store them for months, as they slowly ripen, and also share a bunch of my favorite canning recipes to use them up.     If you are pulling tomatoes because of frost predictions rather than blight, you can pull up the entire plant, roots and all, and hand them upside down in a root cellar or basement. They will continue to ripen for several months. The last time I did this, I pulled the plants in late September and finished the last vine ripened tomato just after Christmas.

    I live right at the line separating zones 7 and 8. We can wait until October, sometimes November, to harvest all of our green tomatoes. It was November in 2021. We store them in brown paper grocery bags, rolling the top of the bag closed - and only one layer. Place the bags in a closet that doesn’t get hot. We ate our last ripe tomato in February 2022! Then it was time to plant in our high tunnel in March.

      I am zone 6b and our frost date is around October 13/15 so I still have time but I’m not sure if the smoke will effect them in Washington stay

    I live in Fort Worth. I didn't have any tomatoes get a good size and I only got about ten of what did show up. The drought was awful. It's been so hard watching all the beautiful harvests on TH-cam. I put the little ones in a basket I kept what little produce I got. I hadn't looked in the bottom for quite a while and when I did, there were some ripe ones and blushing ones. I was so shocked, but happy. Have a great weekend.

    I have learned so much about green tomatoes. As an Aussie, I have never known it was even possible to eat green tomatoes! We just don't. I will now though ❤️

      Fried green 🍅 tomatoes are great.. you can also wrap them in news paper and store them, I've done it...👍❤️

      Hey y'all can look for some of the tomatoes that are green when they are ripe if you want to use red tomatoes that have not turned yet look for firm ones and pay attention the the varieties as some are more or less sour and if you do or do not like the sour flavor you can remember the ones you like. I been eating fried green tomatoes and fried okra all my life and it would not be summer without them!

    From Saskatchewan Canada. I rarely get any vine ripened tomatoes because we have a short growing season here. I picked all mine a few days ago because we had frost warning already. We are very used to ripening our tomatoes indoors. I just dump them in boxes amd cover box with newspaper. Look through them every couple of days and pick out ripe ones. As they ripen either perserve or put in freezer for later. I currently have 6 huge boxes in my garage. Will soon be ready!

    "Dal" are pulses such as lentils "Curry" is a word made up by the english to denote anything flavored with Indian spices. India has regional cuisines and a lot of the seasonings overlap, but the combinations and base ingredients are not quite the same because the climates in the various agricultural regions are not quite the same. I've just started my Indian continent culinary exploration, so I thought I'd share. 🥰

      The Tamil word for sauce is Kari. Many English tried to use the words they heard as they lived with the locals and had food made by the locals. The generalisations are as much a part of any social group as they live in a foreign land. For example ketchup was originally very different to what we know now. Chutney is a salsa in the US but you have the Mexican inclusion while we have the Indian.

    Hey Rachel, I have been doing this for several years now. I will attest to everyone this works every single year not just sometimes. There are a few tomatoes I plant on the 4th of July, Just for this reason, knowing that these will be green at the first frost. So that day a clip them off leave the plug or stem in the tomato and then store them just as you did. Once a week just go through and look for the ones starting to turn and bring them upstairs to use. Most years we for sure make it to Thanksgiving and some years beyond it really depends upon when the frost comes.
    We make fried green tomatoes and fried okra all summer into the fall as long as we can here in Minnesota zone 4A. Green tomatoes with cumin and lime work great as a base for fajita seasoning. Thank you for the video and all the great ideas. Take care be safe bye for now

    Thanks for sharing. I lay down paper towels in a flat clear plastic storage container, then a single layer of green tomatoes, covered with another layer of paper towels. I leave a bit of space between the tomatoes, just in case one starts going bad, I can see it easier. Put the lid on and put them under the bed. Check them every day or two. Yum.

    I’ve made green tomato relish for years. It has almost the same amount of red and green peppers as tomatoes. It’s sweet and spicy, and very delicious. It’s wonderful on burgers, hot dogs, turkey sandwiches, ham sandwiches or mixed in tuna salad.

      Made green tomato relish last year. Still have enough till next year. So since I haven't gotten any ripe tomatoes this year. Their all going to be salsa Verde.

    I do this too. I’ve had them through Christmas. Stored in a cool place (the garage). I continue to can, make salsa, and sauces. I pick through for rotten ones every couple days.

    I live in the thumb of Michigan. I just picked green and tomatoes with a slight touch of color. I stored them in my garage without any installation. I covered them with towels. Some of them developed spots of rot and others ripened. I would look at them occasionally and toss out the rotting tomatoes. However, I did harvest red tomatoes into November.

    Thank you so much Rachel...we just had our first hard freeze so I pulled all the larger green tomatoes...nothing compared to what you have. I think this summer was too cool and my tomatoes did not get large at all. The temps were in the 40s at night throughout the summer! Living at 7200 ft in elevation has it challenges!!

    Wow love your pantry so full and organized. I too have many many green tomatoes I would not like them to ripen that fast so I guess I should put some in a cooler place to slow things down. Also I noticed through the years even when red they will store well in a dark shelf in my cool basement it is amazing how long they last in the perfect spot Thank you

    This is what we do- put in cardboard box and cover layers with newspaper, or wrap each one in newspaper. Keep in a cool place. The tomatos will ripen and last a few months.I also made a green tomato bread from a recipe on Allrecipes. It is a moist banana bread like taste and texture. The family and neighbors loved it. Read modifications in the ,"I made it review column." I modified it with less sugar, & less oil [ used part applesauce].As others have stated; fried green tomatos are good too!

    This is my first time on you’re you tube channel . Love it. My mom used to wrap green tomatoes in newspapers and we had them through Thanksgiving. I started canning after not doing it for years. Picking my green Tomatoes tomorrow as it is going to frost Monday . I would line to know how to find you’re recipes. I hope you see this and let me know.     My mother used to make a green tomato relish. We ate it with beans and peas. Was really good. Some went in boxes under our bed to ripen later. We had ripe tomatoes for Thanksgiving.

    My mother-in-law taught me to make Pepper Relish using green tomato. I have my grandmother's Piccadilly recipe the used green tomatoes. Both are a mandatory condiments to have on the shelf.

    Within the last week I've made 2 different chutneys with my green tomatoes; green tomato pineapple chutney and green tomato apple chutney. Both a wonderful on grilled meats and I make them every year!

    I have made mock raspberry jam with my green tomatoes and my grandkids love it. Another favorite of mine is mock mincemeat pie filling. Great to have in a jar all ready for the pie shell.

    Your tips for using green tomatoes are invaluable. A lot of my family and friends are surprised when I tell them that I can tomato-basil jam--my favorite. It is great on ham-and-cheese buns, which, if I heard the last name correctly in a prior, your husband is of Dutch-descent and so would be very familiar with the Dutch love of ham-and-cheese buns? (I am also of Dutch descent.) I like to spice up the traditional ham-and-cheese buns by slathering on a bit of tomato jam.

    My tomatoes are loaded with green tomatoes. The plants look like they are coming back and reblooming!!! I've never had this variety before but Atkinson is a winner in my book!!!! My grandmother would cover the Maters until a killing frost. If it was going to get real cold she would pick everything take the stem off and turn upside down on cardboard or newspaper. They ripen up good in a cool dark location!

    Thank you sooo much for sharing your way of storing green tomatoes!!! I was taught to put my green tomatoes in brown paper bags!!! It worked but I always had smashed tomatoes!!! I would loose about half of them because of that!!!

    I agree that keeping things clean is important and I wouldn't purposefully leave diseased foliage in my garden but, most disease causing "bugs" are in all gardens. If conditions are right for good/bad bacteria just as good/bad fungi, they will flourish. Jadam gardening helped me to realize this and it just makes sense. I had late blight this year and once I would have freaked myself out about it but I'm just going to add as much health to my beds before putting them to bed for the winter and give myself a some grace. Thanks for the storage tips!!!

    I always did this in Canada just before the first killing freeze. I always grew tomatoes in my little greenhouse to extend the season but always had a lot of green tomatoes.

    I made your green tomato ketchup and funny enough, I put it on my meatloaf. It was wonderful and much better than the red ketchup. Love your videos and they always give me ideas.

    Great produce, Rachel! Canning is hardly ever used here in Norway. When I make jam or other things, I always freeze everything. I don’t even know if you can get hold of a canner here.

      If you have a deep enough stockpot (a couple of inches deeper than your jars), you can use it as a waterbath canner. Use wire or twist ties to fasten canning rings together to form a platform for the jars to sit on 🙂

    in Appalachia, im in western NC near cherokee, folks wrap them in newspaper and store under a bed and have fresh tomatoes until Thanksgiving.

    We plant a winter garden, and tomatoes are in that garden, and we have fresh until frost, and bring in the rest of the green ones then. We have eaten tomatoes on out in December, doing them this way.

    Im from Nova Scotia, my mom and grandmother made Green tomatoe chow chow ...im sure theres a recipe
    I dont have it right now , but it is a delicious condiment, tom, onions
    Not sure rest right off....give it a try

    We pulled out tomatoes todaas they are forecasting frost for us tonight so we have alot of green tomatoe thanks for some great ideasy

    We say sweet breads in my area too. Minnesota. Envious of your tomatoes, mine didn't do too well this year.

    HI I do the same thing as does my neighbour and we will eat them well into the new year Feb even, but some varieties if it is too cold will get a black spot that will ruin the tomato so you have to watch closely and pull it. Perhaps washing them better or look closely before you store them with the rest it might be a tiny black dot. Trust her this is the way to go !

    I can whole green tomatoes then drain n slice them fry them. I also like to toss some wedges into a roast. ( It adds a wonderful tartness).

    I'm from the UK my mum and Granny used to make green tomato chutney from excess green tomatoes. There are plenty of recipes on the Internet.

    My mom used to wrap the green tomatoes in newspaper and sometimes we'd have them until February. I use this big long strawberry boxes from the grocery store if I don't have canning boxes empty
