I actually eat a lot of low carb, and high protein tortillas, I bet a good grilled quesadilla with some turkey would be similar and tasty as well!
I do like myself some good breads. I could just eat a few bites of artisan bread as a snack, a few bites here and there do add up though.

I like to add garlic powder to my grilled cheese. My wife loves it especially if I make us tomato soup with it and add basil. She prefers wheat bread.

Have you ever had one with banana on it? It's one of my favorite types of grilled cheese sandwich, you can put a bit of paprika powder and cayenne powder on the banana for some extra flavor as well
My mom would make it for me and my sister when we were little kids and now I still make it for myself sometimes
