    I'm lactose intolerant. I made this cream cheese with semi-skimmed lactose free long life milk. It worked!! I got very little amount though (it fitted in my palm) but it was totally worth it. The taste and texture was great!

    This is a very popular n common food item in the hills . .. Kalimpong , West Bengal , India . We cook it with onions chilli and tomatoes to make tasty chutney ..or use it fresh mashed with coriander, tomatoes and chilli paste ..

    never seen this before wow its amazing! specially for lactose intolerance people they will understand. finding a lactose free cheese is super difficult but milk is always available. i will try this wil lactose free milk ASAP!!!

      You can make most type of non fermented cheeses at home really easily. It's not hard to make mozzarella from cream cheese.

      Depending on where you live that may be so. Here in the NYC area it's ALmost five dollars - four and change - for one pkg of philadelphia cream cheese. On sale it's two bucks but thaz when it's on sale which isn't a regular thing. It WAS two bucks.

      Put it on a bagel with some jam, make a cheesecake or Cream cheese brownies, make a dip, lick your fingers, put it in your mashed potatoes. If you put it on a celery stick and add raisins, you’ve got ants on a log better than peanut butter imho. Go to allrecipes.com and see what comes up from cream cheese. Good luck!

      👍 That's a great comment - teaching yourself to cook.
      When I got my first apartment Ì thought, if I want to eat, I better start making what my mom made. But more than that, it better "taste" like moms'.
      The first time I made chocolate souffle, it was watery in the middle🤦‍♀️ The second time, it was less watery in the middle🤦‍♀️ and the third time, IT WAS A SOUFFLE! Same with my first bake of IRISH SODA BREAD - doughy in the middle but the third time it was a wrap. Point being, don't get discouraged. MAKE IT AGAIN. There were no videos then to watch the presentation as you cooked/baked along. You opened the cookbook, looked at the picture and had all the ingredients.
      (I also called my older sister, A LOT)
      Have a lot of fun, because it is a lot of fun❣ and don't be afraid to try ANY thing!👍

    I tried but my curd is not as bis as yours, mine was really small. so my question, why is that? is it has to be fresh milk or it can be full cream milk (UHT) from supermarket?

      No problem stain properly then grind

      fardumbo ricotta is made with left over whey. Ricotta means cooked twice. I do not remember the exact temperature to cook it. You have to keep a steady temperature. I just googled recipes for ricotta cheese. I made mine with leftover whey from making yogurt.

      But nursery rhymes were not made with cute little intents.
      "Where is the boy who looks after the sheep? He's under the haystack fast asleep." - the real meaning of that is, the boy is dead.
      In a record of nursery rhymes my sister bought for her son, the last line of a pretty little poem went, "poor little thing. She had but one eye.".
      There was one,
      "FATHER WILLIAM", where a little boy asks his uncle all kinds of questions. The boy starts each question with, " You are old, Father William...". FATHER WILLIAM answers each little question until he finally has enough, and roars,
      "Be off 'fore I kick you downstairs!".
      😅 Some are so sad. THE LITTLE MATCH GIRL, lights her three last matches she is selling, to keep warm in the freezing weather. She knows she shouldn't as her family needs the money, but she is so cold. With each match she sees a beautiful vision, and she is frozen to death. 😪 There are so many more 😢, but I better stop here.

    Since i have kids allergic to actual cow milk would this work with raw unpasturized goat milk? We get our milk from an old order mennonite farm. Never had an issue with it. Thanks

Is it safe to assume that you need 8 tablespoons of lemon juice for 2 liters of milk? I ask because I need about 400 grams of cream cheese for a recipe I'm making (burnt Basque cheesecake).       @@FoodCodearunima so I went ahead and made the cream cheese using this recipe, which I then used to make burnt Basque cheesecake. I'm happy to report it turned out perfectly! I have a question though, which is totally out of curiosity; the whey that was left over from when I made the cream cheese looked like boiled pasta water with very little suspended particles, whereas the whey in your video is like really cloudy. Would you know why this is? Again, this is just out of curiosity. No need to reply as I'm sure you're really busy. Thanks!

    Thank you so much, at last a recipe without mesophyllic culture, little tip, don't use tab water over the cheese rather a pre-boiled cold water as tab water contains living organisms , specially if you don't add salt to it.

      StrawberryBlond21 sure! You can substitute the milk/water used in recipes to increase the protein and vitamin content, such as cakes, breads, brownies, shakes, smoothies, soups, to cook grains(rice, oatmeal, quinoa, beans). The flavor is neutral, but be aware of the sour taste(depending of how much lemon, vinegar you used).

    I want to use cream cheese in a frosting recipe and I am concerned about the taste...I have seen several recipes/videos one using lemon juice and the other using white vinegar...does those flavors not cook into the cheese... I am obviously not a cook or a baker... I don't know how the chemistry of these recipes work, but I like to try to cook sometimes. I watched the Pioneer Woman make cream cheese with lemon juice and when she tasted it afterwards was like "this recipe is so yummy" but she never said anything about the flavor...or using the cream cheese in other recipes.

      My suggestion: Use White Vinegar, good for frosting, otherwise you get slightly lemon flavour in the frosting

      It is so yummy, much yummier than commercial cheese, and no taste of vinegar is felt (if right amount is added), what makes it taste so good is that it is not salty or sour.
