Hi. I followed this recipe, but when I put this on pan to heat the salami after freezing it, it did not stay in shape and turned mushy. If you can, please help me to identify what went wrong.
Some of the things that i could still remember were modified starch, isolated soya protein, centutex(stem), phosphate, salt&seasoning,, herbs&spices, meat and ice cubes.

Instead of freezing, steam the mixture till it becomes solid. Then you can fry it or freeze and then fry without it becoming mushy or losing its shape
