Marion - I made this today and it is incredibly amazing. So delicious! The only change I made was to use angel hair noodles as that is what I had at hand. The fragrance when those star anise hit the sauce is smellicious! It is exactly like nothing I've ever made before that could be called ragu but it is now my fave.
Gosh I must try this one! Just one note: havely salted water can mean a lot! The golden ration to cook pasta is: 1 liter water, 10 grams salt, 100 grams pasta, and you are good to go! Lots of love from Italy 😘
Salted water for pasta is so important - it's THE taste changer and the way to do it is to pour the salt in the palm of your hand and then in the water, before it boils. With 5 siblings and being Sicilian - this my younger brother teaches me 💥 and NEVER use PANKO, use BREADCRUMBS!

Usually, we don't use breadcrumbs with grated cheese because that is a very heavy meal, there. Heavy in as if you go swimming, you'll sink. And if you want an authentic taste to your sauce, use ground lamb - brown it and then let it cook in the sauce !

Today I've made this ragu though I only had beef meatballs, did everything the same but added a couple of tea spoons of mixed herbs and used a beef stock cube in my pasta water. Delicious. The fragrance of that lemon crust topping is something else!

The ragu mix was so beefy all on its own. Maybe it's a bit healthier to use a stock cube instead of loads of salt in the water but taste wise, it didn't add anything extra

Omg this was such a tasty meal! Made it without the pork mince as there’s only 2 of us. Added in some dried chili’s for more heat during the simmer stage. There was no leftovers which is unheard of with 2 ppl!! Thank you for sharing this recipe ❤
I didn't recognize Marion is the girl joined in Australia Master chef before that I really loved because she has different hair style and make up until I searched her on google. Omg, she used to be my favorite idol in all master chef seasons. I really love and adore Marion and never think she will has her own cooking channel.

I like ragu the classic way of Bologna - very little tomato, more beef stock celery and milk for flavour. It doesn't take long to bring out flavour as it's in the fat and stock. But this version with tomato, beef/pork and lemon/cheese breadcrumbs topping I must try.
Here is a hot tip. Add between tablespoon and a half to a tablespoon of Thai fish sauce to your bolognese. It will give your Ragu a great twist no one will be figure out. And when the Italians get grumpy remind them it’s absolutely completely traditional Thai fish sauce is very similar to Roman Garum. Which historically was put in everything.
I added star anise following your recent meatball recipe and it was DIVINE!!! Can’t believe the depth of flavour. It’s going in every beef dish for now on. Thanks!

Ooh I made a Ragu last night almost identical except for the Korean chilli paste and the pangrattato. Though I made heaps so will whip up the pangrattato using gluten free Panko and Romano cheese because I prefer the taste over Parmesan. Romano cheese makes practically everything taste better! I think you’re an espresso drinker btw but you’d drink instant of time poor and desperate for caffeine. Thank for sharing x

Love the combination of ingredients! Just one question: the recipe lists Gochujang paste but Step 2 mentions Miso. PS. In the end, I went with Japanese miso and not Korean Gochujang (which is chili peppers and no soybean). I added a sweet pepper and some celery (hidden veggies). It was delicious! Thanks Marion!

Qld has a pretty strong coffee culture much like the rest of Aus so I'd guess you like the good stuff BUT most of us in Aus grew up with instant coffee in our households and have at least 1 brand of instant we can cope with so maybe instant at home?... at least when you're here. I'm not sure about the coffee culture in Thailand for when you're there though 🤔
The southern state snobs that move up here at a rate of 9000 per week always whinge about our coffee but it’s actually pretty good. I’ve had bad coffee in Sydney and Melbourne before- they pretend that doesn’t happen

There are a lot of great cafés but there are also plenty of terrible ones especially amongst the large chains. The people moving up there at record numbers since the plague hit are made up of mostly whingers by nature I think.. not all but a lot of them a just precious. Pretty sure it was QLD that started the coffee culture in Aus actually... you can keep the heat though bugger that 😬🤣

It's enameled cast iron; possibly a older Le Creuset based on the colour, and handle type.
