*More info for you guys*
1. The reason that I extrude the noodles twice is to get a better texture. This machine is for
use at home so the motor engine is not powerful enough, so the texture would be less firm and elastic than we would expect. So I tested many times and came up with this method, which I believe is the best instruction in my taste.
2. You do not need to worry about the disc to extrude twice because the noodle batter is still soft enough.
3. Tapioca flour is to give a more chewy texture. You may use the potato starch instead.
4. Xanthan gum is for better combining with the flour, like gluing together. The store-bought
noodles contain many chemical enhancers. Xanthan gum is the best and safest ingredients for the homemade noodle recipe I found.
