You are a genuine Italian cook and GREAT teacher! What makes your cooking videos a cut above the best of any other is the information you impart to us in a style that belongs to you alone. Maybe it's because you just seem to be a down-to-earth nice, intelligent, family guy who truly knows his (Italian cooking) stuff and is passionate about it. From explaining to us why to use Russet potatoes baked in the oven and then pushed through a potato ricer for mashed potatoes to what Italian Wedding Soup really means - the marriage between green vegetable and meat, all your "asides" add to our growth as good cooks. When you know why you use a certain ingredient or why a particular method is used, making the recipe becomes crystal clear, easy, and second nature. Thank you for teaching us in a warm, witty, and fun way. The background music adds to my enjoyment as I adore that music. I've been singing those songs and listening to those vocalists all my life. Oh, yes! Your sons are absolutely beautiful (I saw a photo of them on your website). 10 out of 10 - If you take a few of the meatballs (like 3 of them, chop them up to tiny bits) and let them get really dark, almost burned but just short of the burn. The flavor to the soup is magnified.

My grandmother always started with a whole chicken & added the shredded chicken to the soup along with the meatballs. I grew up this soup, my children did & now my grandkids who love it. They ask at least once or twice a month for it...have to keep the Italian culture & food alive as the generations come along and the bloodline thins out with their American spouses lol. Thats what happens when u leave Jersey & come South. Another great version of Wedding Soup. Keep the traditional recipes coming Joe. Thank you

This is the best recipe I have found!! I love how he fries the meatballs, they make it so much more flavorful and gives color!! If you throw them in the soup it’s also so greasy. Also he uses red meat not chicken or turkey. Truly amazing!!! A hit every time!!! Ty for this video!!

Do you recommend going to culinary school or working under a apprenticeship because i've heard that some people who work under someone and not go to school actually get a higher position than someone straight out of school within a few months to a year

I'm still using my nonnas recipe . 1 boil a whole chicken when fully cooked remove from the liquid in the pot cool and shred the meat. 2 add the mirapoix to the broth and simmer 3 add the meatballs , chicken and escarole not spinach bring to a boil 20 minutes and done . Serve with garlic toast

This is Wedding Soup the right way. Like you said, it marries the ingredients. In fact, the ingredients add the perfect amount of flavor. Your meatballs are a lot bigger than I like in my soup, but it turned out Fantastic! We were cooking other items for dinner, and so I didn’t want to spend a lot of time preparing, so I got a product from Surfixinc (Melbourne, FL), to help make the meatballs faster. Turns out I saved at least an hour or more in the kitchen not having to roll the meatballs by hand.

Wedding soup is famous here and we make ours much like your's except for the egg/ cheese slurry which I think is fantastic. I'm going to trust you on the orange peel. Never tried that. We also make our meatballs half the size and drop them raw into very hot broth. I'd like to try the fry method for that extra layer of flavor. I do that with any other kind of meatball I make so why not for wedding soup. Thanks Joe...fabulous recipe !!! :o)

Great video A comment about your kitchen design: the proximity of the stairs to the countertop means you are getting dirt from people’s shoes kicked onto the counter top. I understand wanting to have as much light as possible in the kitchen - but a wall that extends to a point to where the stairs are a foot below the countertop would be more hygienic.

No spinach..to me, spinach in the soup becomes a bit slimy. Escarole does not do that; it adds a burst of deliciousness to t h e soup😊
