Ingredients Brine 2 lbs chicken thighs 2 cups water 4 tbsp sugar 2 tbsp salt 2 sprigs rosemary 3 cloves garlic 3 ginger slices Batter 1 cup flour 1 cup cornstarch 1 tsp baking soda 1 cup ice water Honey Butter Sauce 1 stick butter 1/4 cup honey 1/4 cup sugar 1/4 light soy sauce Instructions Brine -In a bowl combine water, sugar, and salt; stir. -Add garlic, ginger slices and rosemary sprigs. -Slice chicken thighs into bite size pieces. -Add the chicken to the brine and cover with plastic wrap overnight in the fridge. ~24-hours later~ -Remove from the fridge, pour out water and throw out garlic, ginger slices and rosemary sprigs. Batter -In another bowl combine flour, cornstarch, baking soda and water until smooth; add more water if needed. -Pour batter over chicken and mix. Fry *This recipe is for a double fry* -First fry the chicken at 275ºF (135ºC) in batches; take it out when light gold in colour. -Do the second fry at 375ºF (190ºC) again in batches; take it out when golden in colour, place it on a wire rack. Honey Butter Sauce -In a large pan at medium heat add butter until melted and bubbly. -Add honey, sugar and soy sauce and mix until bubbly. -Add all the chicken until all are covered in sauce. -Turn off, take off heat, pour on to a wire rack; sprinkle with parsley flakes and serve.

He used wooden chopsticks and it makes it easier to hold onto the meat than slippery ceramic or stainless steel ones. Alvin's a home cook so he's pretty used to handling things around the kitchen easily. To an amateur, it's pretty hard straining things first try with chopsticks. The world doesn't revolve around anyone.

i tried this recipe today and it was amazing! very easy to follow and adjust as well! for me, the sauce was a bit too sweet so i added half a squeeze of lemon to balance it up and some cornstarch to make it even ✨thiccer✨ to my liking. DEFINITELY RECOMMEND :)

Your channel is the most tragic thing that has happened to my diet!!!!!! This was sooooooooooooo good!!!!! Here's my amateur home cook review: Brine: The brine is the star of the show. The combination of the ginger, garlic, rosemary, sugar and salt is brilliant. After a 24-hr rest in the fridge, I was left with a very fragrant, tender, and juicy meat. It's flawless. Batter: Instead of using plain water (which is totally fine here) I opted for buttermilk. I never fry chicken without a buttermilk batter, but that's just a personal preference. The batter that you used is simple and flawless. The crust had a crunchy exterior with a soft and enjoyable interior. Perfect! RESIST THE URGE TO ADD OTHER SEASONINGS! Honey Butter Sauce: I found the combination of cane sugar and honey to be a bit too sweet for my taste. If I were to make any adjustments, I'd either completely eliminate the cane sugar and add more honey or just cut back on the sugar to 1/8 cup instead of 1/4 cup and still use 1/4 honey. The soy sauce gave an extra punch of savory flavor that paired very nicely with the butter and honey. Final review: This recipe earned it's way into my cookbook. I topped my honey butter chicken with sesame seeds and a plated it with a side of scrambled eggs. Thank you so much for sharing this recipe and I look forward to trying out some of the other recipes on your channel.

I tried to make this today and it was so good I danced while eating ! But I made a few mistakes : -because I'm used to putting tons and tons of different spices in marinades, I thought the chicken would be bland with this simple broth....so I added some salt, sugar, and chili flakes to the batter. It ended up being too much and it's a shame because THIS BRINE IS AMAZING ! The flavor feels fresh and it makes the chicken so juicy ! - For some reason my coating didn't solidify as quick as Alvin's so as the chicken pieces were cooling, they lost a bit of their crunch and the first layer of batter became a bit chewy (they were still crunchy cause the batter is very thick). I'm not sure why this happened.... Some advices for next time ? Also if you read this far I admire you

I just made this today, and while I'm terrible when it comes to frying (Hello oil splatters galore!) it came out so good! The brine in particular was amazing! Edit: I made 3lbs worth of chicken (with amounts for everything else adjusted and doubling the sauce) as well as two cups of rice. It was enough to feed a family of 5 WITH leftovers. We've even talked about a few tweaks we can make for next time. (A pinch of red pepper flakes in the brine, adding a bit of orange zest and juice to the sauce, and changing out the regular soy sauce for low sodium soy sauce.)

I tried to make this today and it was so good I danced while eating ! But I made a few mistakes :
-because I'm used to putting tons and tons of different spices in marinades, I thought the chicken would be bland with this simple broth....so I added some salt, sugar, and chili flakes to the batter. It ended up being too much and it's a shame because THIS BRINE IS AMAZING ! The flavor feels fresh and it makes the chicken so juicy !
- For some reason my coating didn't solidify as quick as Alvin's so as the chicken pieces were cooling, they lost a bit of their crunch and the first layer of batter became a bit chewy (they were still crunchy cause the batter is very thick). I'm not sure why this happened.... Some advices for next time ?

I just made this today, and while I'm terrible when it comes to frying (Hello oil splatters galore!) it came out so good!
The brine in particular was amazing!
Edit: I made 3lbs worth of chicken (with amounts for everything else adjusted and doubling the sauce) as well as two cups of rice. It was enough to feed a family of 5 WITH leftovers. We've even talked about a few tweaks we can make for next time. (A pinch of red pepper flakes in the brine, adding a bit of orange zest and juice to the sauce, and changing out the regular soy sauce for low sodium soy sauce.)
These videos genuinely are amazing. Whenever I have a bad moment, watching one of these seriously chills me out. Please make more!
