Alchemy is the art of making potions :) what she was supposedly researching was spells to bring back the dead and unnaturally extend life, which fits more into the magic school (basically a type of magic) called necromancy. Oh, and she's an elf xD Not a fairy :) She has no wings and is more than a hand tall for starters :)
Pretty much all living creatures generate mana. But mages, as they need mana to cast their spells, training to increase the amount of mana they have. You'll learn more on this as well as how the magic systems (yes, I said systems) work in this universe.

In contrast with chemistry people also try to understand why certain reactions are happening. In video games and fiction it's often about mixing potions (for healing and stuff). Frieren is studying a book that is supposed to be about immortality and reviving the dead through magic, not alchemy.
The topic can be a bit complex but there is one more important bit. Alchemy is about transmuting material into another one, for example: to change lead into gold. In fulletal alchemist they use these idea a lot
If you guys really want to enjoy this animation you should not take your eyes off the screen for a second. You should keep your eyes on the screen and not stare at each other when discussing it. Very often, a brief moment of dialogue will play an important role in later episodes. You guys are missing most of it, which is a real shame.
