Pit brown sugar caramel frosting or even cream cheese frostening for your topping. I'm a skosh lazy, i put a paper doily on top, then powdered sugar for a design, diest last long enough at my house to get fancy- iced.

They bake up soft like a loft house cookie, but completely hold their shape when cut and don't spread. My family literally revolts at Christmas if I don't make these. LOL Once I found that recipe for soft cut sugar cookies, I tossed all the rest of the cut sugar cookie recipes I had and never looked back.

My coworkers before I retired loved when i would make cookies and bring them in on Christmas eve. I make sugar ones from scratch and a double chocolate cookie with white chips and mint chips that I add in but that cookie is from a bag but very good. Mmmm Red Velvet.. Add about 1/4 cup of brewed coffee to your liquid for a strong mocha flavor , lesser amounts make it not so pronounced.
