INGREDIENTS
½ cup (113g) unsalted butter melted or softened
1 15.25 ounce box cake mix (any flavor; see notes)
2 large eggs
1 ½ cups mix-ins see notes for variations
INSTRUCTIONS
If using softened butter, you’ll need a hand or a stand mixer. If using melted butter, you can use a mixer or do the following by hand.
Place butter, cake mix, and eggs in a large bowl. Stir or mix until combined and no lumps remain. Stir in mix-ins.
Scoop 2-tablespoon balls of cookie dough onto a cookie sheet lined with parchment or silicone baking mats. No need to space them; we are chilling the dough. Chill for at least 30 minutes.
Preheat oven to 350°F. Line a second cookie sheet with parchment or silicone baking mat.
Space cookies 2-inches apart on cookie sheets. Bake for 10-13 minutes, or until they just lose their glossy sheen. These cookies stay puffy and will settle a bit as they cool but don’t become flat.
Immediately after removing from the oven press a few more mix-ins on top for decoration. Cool at least 10 minutes before removing from the cookie sheet.
Store in an airtight container for up to 3 days or freeze for up to 2 months.

Ive been making these awhile and my husband is particular about his favorite cookies. This is how he likes them:
DH Golden Butter cookie mix, 2 sticks melted butter, 2 eggs, 2.5 C oatmeal, mini chocolate chips. Mix well, chill overnight, slightly underbake them to set up moist.
French vanilla cake is good too. Everyone loves these cookies and not one comment about them being cakey. The oatmeal bulks them, stretches the recipe, and the under-bake helps them set up moist.
These cakemix cookies have made my life a bit more simple. Plus they freeze very well.
I am healing from an illness that effected neurotransmitters and GI functions and simple is best for my life. God is healing me everyday. Tho i cant eat cookies, my husband loves them. He works hard, exercises, and maintains his weight very well. All praise and thankfulness to the Lord. 🙏🏼

If you add a couple tablespoons of all purpose flour, they will not spread so thin also.

I add 2.5 C oatmeal, fridge the dough overnight, slight underbake next day, never flat. 💕
I do a spice cake mix with dried cranberries and orange zest. Roll in powdered sugar. Always a hit,

I made these as soon as I seen your video. My daughter and I chose Strawberry cake with white chocolate chips. In our oven 12 mins was the perfect bake time. Thanks for sharing the recipe they’re delicious!

We used to make box cake cookies all the time years ago. My favorite was orange cake, dark chocolate chips, put a little of orange zest in batter. It taste like the chocolate oranges you get at Christmas time! There is not very many lime cakes, So we took a lemon cake, put key lime zest and flavoring in with green dye. Keylime frosting! They were out of this world! Thanks for reminding me how much I loved doing cake cookies!

I'm gonna make butter pecan with butterscotch chips- 1) I'm allergic to chocolate 2) that sounds so good 3) my local meat market with an adjoining bakery gets top dollar for a similar recipe because I've bought some myself.
I just made these: 1 box BC Devil's Food Cake Mix, 1 stick softened salted butter, 2 eggs, 2 T. unsweetened cocoa powder, 1 t. vanilla. I mixed all together, chilled the dough for an hour then used a 1 T. scoop, baked 10 minutes and can I just say YUM! I added the cocoa powder because I wanted an extra punch of chocolate. I might add a little more next time, or use a different mix like BC Triple Chocolate. I got 36 decent sized cookies out of this batch. I sure wish I had this recipe back when my daughter was in elementary school and would come home saying "I need to bring treats to school tomorrow" 😆
If you add a little espresso powder to the mix, it will elevate your cookies and enhance the chocolate taste, but only if you don’t mind a hint of coffee flavor.
I recently did some Lemon Cake Mix cookies...I rolled them in powdered sugar before baking and it made a "crinkle" type cookie. I also made a lemon batch with white chocolate chips and macadamia nuts. Sooo good.
I made these today! Omg, to die for!!! Lol I had 19 cookies and baked for 14 mins & they were so fluffy and moist. Only difference was I let the bowl of dough cool as I didnt have enough room in my fridge for the rack.

I tried Betty Crocker Cherry Chip cake mix with white chocolate chips and chopped maraschino cherries. I rolled them in powdered sugar for frosting ❤
I'm using Betty Croker Red Velvet cake mix, with White Chocolate chips.

made lemon cookies. they were perfect. However, I did chill the bowl of dough and then scooped out the chilled dough. Guess I can't follow directions but it didn't matter, everyone loved them as is.
I'm glad I watched this to get the chill the dough info. I'm going to make Strawberry (no add in, may frost) Having a Rose Wine theme and I think they will look pretty!
Making more of these today..using chocolate cake mix and then right when cookies come out of oven I'm adding a Hershey's kiss to the middle. People love them!!!!

I made these cookies with the spice cake mix for Christmas- turned out beautifully! 1 box of cake mix, 1 beaten egg and 1 8 oz. container of softened Coolwhip. Fold together, scoop and roll int icing sugar. Bake at 350 for about 12 minutes. No spreading and we’re delicious!

I’m happy to find your video on these cookies, because I’ll definitely put your tips to good use! :) I had decided to make these as one of our Christmas Cookies this year, and I plan on doing around 20 dozen of just this kind, because they’re so easy. So these are what I’ll give to neighbors, friends, family, & etc, with some peppermint bark. I used to make enough cut out sugar cookies for everyone, and tons extra for my four Grandloves to decorate at their houses, but Grma is taking it easy this year..Lol
I bought all Betty Crocker Rainbow Chip, cake mixes, and a bunch of the white chocolate, Sugar Cookie, Hershey Kisses. They’re speckled with holiday colors, but I’m also going to add extra Xmas jimmies to my cookie batter, and then I’ll be rolling them in powdered sugar, hoping for that crackle effect, and a little extra sweetness. Then I’ll pop a Hershey’s Kiss onto each before they cool.:) Fingers Crossed!🤞😅 >Subbed!👍

We don't usually use cake mix in our house however my Mom got cake mixes on manager special for a quarter 😁 Thank you for an amazing way we can use them all !
I made these with a seasonal Lemoncello cake mix from Giant. Could also use a regular lemon cake mix. I mixed in a bag 3.5 oz of dried blueberries. Drizzled top after baking and cooled with lemon glaze. Wonderful and quick. I also would like to comment. Recipe says 2 tablespoons of batter. That make a huge cookie. I used #60 scoop which is 2 1/2 TEASPOONS. So many cookie recipes I see on the internet say Tablespoons when way to much. Plus you do not get 24 using 2 tablespoons.

I think I'm going to try this using the Libby's pumpkin bread mix. It makes muffins that could be easily mistaken for cupcakes, so it should work okay.
A cake mix calls for 1.25 cups water, .5 cup oil, and 3 eggs.
The pumpkin bread mix calls for 1 cup water, .5 cup oil, and 4 eggs, PLUS the included can of pumpkin. Given that one egg is usually .25 cups, it's essentially calling for the same amount of liquid as a cake mix, besides the pumpkin. So two eggs and a stick of butter should work great.
Plus chocolate chips!
I'll try it and see how it works! Hmm, maybe I'll make a batch of cake mix cookies alongside it for comparison purposes.
Yes it should work! I've made cookies from Krusteaz pumpkin bread mix so the Libby's should work too.

Thank you for this recipe. I'm going to make yellow cake cookies and put buttercream icing in between to make sandwich cookies. I'm going to put some sprinkles on the cookies that will be facing up (the top lid of the sandwich cookie).
Ohhh, I just realized I could even roll the sandwich cookies outer edges (where the icing is exposed) in the sprinkles. I think that would be cute too.

I sometimes use cookie baking rings, and make thicker cookies, cut in half horizontally, and put icing in the middle.

Instead of chilling cookies on baking mat, can you make dough and chill bowl of dough for 30 minutes?
Yes you can, I just prefer scooping first because it's hard to scoop the dough once it's cold.
