Although I think they mix the yeast with the warm water first and then add in to the dry mix, but I seem to like the way it's done in your video. I think I'll try this way first. In the video, she's using "instant yeast" otherwise yes warm water sugar and yeast to proof it before adding to your other ingredients. This one is easy better off to follow. I would make mine same like her video!
In Tonga we call this keke isite. I've just tried making it your way..... Soooo good 👍 taste exactly the same as our keke isite but your way is more easier. Thanks for sharing, I'll be making it your way from now on.

U can jst leave it out. I placed it in the oven because i wanted it to rise fast. But if u have time you can just leave it anywhere. It’s still gonna rise.
You forgot to write the temperature of the water. I believe it's important to mix it with very warm water. As it help the dough to ferment quickly. Weldone though 👍
I mentioned warm water. I didn’t measure the temperature tho😩. But very warm water will destroy the yeast’s activation. Warm water is good. Not very warm

You should get the same results either way, they most probably use the kind of yeast that needs to be activated first that's why
