Yummy dish!! However those tails didn't come from an avarage Ox! They are Water Buffalow's tails! An exotic sub species more related to Yaks than Domestic Cows! Their meat is delicious yet tougher than Beef! Without a Pressure cooker it'll take longer time to cook , you guys probably spent the whole day shooting this Vid! Special compliments to the kitchen staff! They are real hard workers!

We don't normally see whole, skin-on ox tail here in the UK- even if it's whole, it's already been skinned. Generally, it's already been cut into separate vertebrae when you buy it, and if it's pre-packed, the pieces in the pack will mostly be mid-tail, and all about the same size. Ox tail is one of those cuts that had been mostly ignored and forgotten, mainly because it takes a lot of cooking. Other than in cans of soup, I mostly encountered it in butcher shops attached to Indian grocery stores ... until celebrity chefs embraced the trend of 'eat the whole animal'. Not only did oxtail and other cuts like ox cheek and lamb shanks suddenly return to main street supermarkets, they did at far higher prices. I live on a severely restricted budget, so I was reliant on those cheap cuts if I wanted to have something other than chicken in my diet. So forget things like ribeye and rump steak: if I can get a good kilo of decent ox tail, if got a wonderful treat coming!
I grew up on those cheap cuts here in the US. Oxtails were a regular dish in my home. Much like you said, they were pre-cut and packaged, each piece roughly the same size. In my experience, cuts like oxtails were most likely found in low-income neighborhoods because they were not easy to cook and were not considered a high-end ingredient. Now the world knows better. They are, and have always been, delicious!
totally agree! i am a Chicken man myself! Ox tail cut is too fancy to enjoy much too often! mostly i ask my Mom to cook it for us every once in a while! after all it is a family comfort meal that takes ages of pressure cooking
Agree - oxtail, shortrib, pork belly, cheeks, necks, and even flank steak and skirt steak - all those cuts used to be cheap (and among my favorites). Please don't let tongue, tripe, feet/trotters, and other offal become popular.

I like to make and eat oxtail, but I make the way it's done in the Caribbean, where I first ate it. Much less work than this and although this recipe is delicious, mine is fantastic.
