Special compliments to the kitchen staff! They are real hard workers!

Other than in cans of soup, I mostly encountered it in butcher shops attached to Indian grocery stores ... until celebrity chefs embraced the trend of 'eat the whole animal'. Not only did oxtail and other cuts like ox cheek and lamb shanks suddenly return to main street supermarkets, they did at far higher prices. I live on a severely restricted budget, so I was reliant on those cheap cuts if I wanted to have something other than chicken in my diet. So forget things like ribeye and rump steak: if I can get a good kilo of decent ox tail, if got a wonderful treat coming!

totally agree! i am a Chicken man myself! Ox tail cut is too fancy to enjoy much too often! mostly i ask my Mom to cook it for us every once in a while! after all it is a family comfort meal that takes ages of pressure cooking
Agree - oxtail, shortrib, pork belly, cheeks, necks, and even flank steak and skirt steak - all those cuts used to be cheap (and among my favorites). Please don't let tongue, tripe, feet/trotters, and other offal become popular.

After watched all the basics of fresh of Thais herbs being use together in one dish ,i began to wonder: what kind of flavour it could possibly provide ?? but i’m not to the degree wanting to taste it just because i think there’s so much mushy vegetables!! Not very inviting!!
Those aren't even close to being giant. Should see ours in Texas. Yes, everything is bigger. Edit: and you dont chop them, you just slip a boning knife between the joint they cut like butter.
I like to make and eat oxtail, but I make the way it's done in the Caribbean, where I first ate it. Much less work than this and although this recipe is delicious, mine is fantastic.

Oh, it´s not too bad. If you braise it for several hours it´s quite tender. It has a savory flavor and the bones add a lot of gelatine. Oxtailsoup is a traditional german dish. But we add tomatoes, onions and sweet peppers to it.
I have braised many tails of the ox......however I have never de-skinned nor broke them down in such a fashion.....Question, how bad does all that burning hair smell and is there any other way with steel?
