I've been doing something for "meal prepping" that has been working well for me. I make a big chart of recipes that use up things I have in the house (I stock up when there is a good sale / just keep staples on hand) and then I write all the ingredients I need for each recipe and then highlight what I need to buy. On nights when I'm tired or I don't have time to get groceries, I look at my list of meal ideas where I have all the ingredients on hand. Doing this, I have two months worth of meals and only spent about $30 to buy the fill-in ingredients of fresh veg needed for each recipe. I live alone so your mileage will vary but it has worked out insanely well for me.

Exactly what I’ve been doing but it was costing me about $50 and last month when I went to the store the same ingredients cost me $100. Not exaggerating. You’d think I live in Alaska or Hawaii or New York City or something but no I live in rural deep East Texas. So I really got to get my game face on and make some even deeper cuts to my food budget because my Social Security check isn’t going to handle these prices. 😢

I'm a student so I live on a similarly meager budget. I try to really fill my pantry / freezer if I find good deals but sometimes that's challenging. I'm currently looking around for chicken breast sales.. trying to find it for $1.69-$1.99/lb. My local grocery store a few blocks away is $6.49! Bonkers!

I make my rice the same way that you do except I use chicken broth instead of water. I think it makes it more flavorful.
Save your seeds to plant into barrels for garden. You can spread the seeds to family and friends too. 🎉🎉🎉

You could also use sour cream or greek yogurt in the cilantro lime dressing in place of the heavy cream/coconut milk.
Personally I'm a "shape" person 🙂 I do my eggs on the stove and then use a glass to cut out circles. What do I do with the "extra" that is between the cups? Why, I'm glad you asked. I use those to make a breakfast burrito or two. No waste here and I have those ROUND shapes for my eggs 🙂. Yes, I know I'm weird ROFL. Or, you could go out and buy a "muffin top" pan and get the same effect with baked eggs.
Used peelings from potatoes into making homemade french fries. 😋 My kids loved them!
I often cook this way to take advantage of really good sales and prep food without doing ten times the dishes. I love having new ideas to do this with. Thank you.

Another friendly money saving tip. since I noticed you mostly use the outermost part of the jalapeños and yet you buy hot sauce. Instead of buying it make you're own remove the stems and chop up the rest of the chilis seeds and all. for a milder hot sauce combine with sweet peppers (all those odds and ends after you chop the peppers, not the seeds or ribs in this case, they are a bit bitter) when you've accumulated around a pound and a half of chilies and peppers cook them in water to cover with half cup of vinegar (apple cider is classic but any will do) 6 cloves garlic 1 tbl salt, (honey or maple or any sweetener to taste 1Tbl or none) cook til tender 10-15 mins blend keep in fridge. couldnt be easier. you can ferment this but that's a tiny bit more complicated Jim

Oh wow I don't know how I missed his video when it came out but then I've been sick with Covid lately. I loved it. I am so tired of how much everything costs at the store. We really enjoy egg roll in a bowl. We also make a sauce of mayonnaise and Sriracha sauce to top it.
True mexican chorizo isn't like the ones you find in the store. It's not nearly as greasy with a much better flavor.

I had a huge learning curve when learning how to make chicken. My parents thought the birds were a poor man’s meat. They were born in Oklahoma in the early 40s. Probably enough said 😳 I never tasted chicken until university. Born in California 1971

Buying extra-virgin olive oil versus canola oil, isn’t necessarily an elitist attitude. It’s about health. Canola oil is highly inflammatory and leads to other health issues down the road. In this case, it’s a matter of Good better or best for your health. As someone unlimited income, I understand that higher food cost make certain items prohibited, but due to health concerns I tried to buy an extra-virgin olive oil, where I can use it sparingly. 😊

Can you make budget meals that don’t include beans/legumes etc. I know it’s harder, since it’s cheap-but that’s my life. Myself and none of my family members/extended like any of that.
