    INGREDIENTS
    Base
    8 tablespoons (1 stick; 113 grams) butter, at room temperature, plus more for the pan
    ½ cup (120 grams) whole milk, heated to 110° to 115°F
    1½ teaspoons active dry yeast
    1¾ cups (238 grams) all-purpose flour
    ¼ cup (50 grams) granulated sugar
    ½ teaspoon kosher salt
    1 large (50 grams) egg, at room temperature
    2 large (40 grams) egg yolks, at room temperature
    1½ teaspoons pure vanilla extract
    Topping
    12 tablespoons (1½ sticks; 170 grams) butter
    3/4 cups (180 grams) granulated sugar
    1/2 teaspoon kosher salt
    1 large (50 grams) egg
    1 cup (136 grams) all-purpose flour
    3 tablespoons (63 grams) Bourbon Maple Syrup (or Lyle’s Golden Syrup, or regular maple syrup,... )
    2 tablespoons (30 grams) water
    1 tablespoon (14 grams) pure vanilla extract
    Finely grated a lemon zest
    7-10.5oz (200-300 grams) blueberries ( or blackberries raspberries
    Confectioners’ sugar for sprinkling ( optional)
    Because most people scoop flour differently, I highly encourage the use of a digital scale when measuring ingredients to get consistent results, and I have provided weight measurements for that reason
    Yogurt, sour cream, peanut butter, pumpkin purée, and the like are all examples of semi solids: ingredients that fall somewhere between a liquid and a solid. I always measure these types of ingredients in a liquid measuring cup, which gives a little more volume than a dry measuring cup because the cup is slightly bigger. If you are not using a scale to measure these ingredients, I highly recommend using a liquid measuring cup, so your baked goods will turn out correctly.
