¼ cup (50 grams) granulated sugar
2 ½ teaspoons active dry yeast
2 large (100 grams) eggs
1 teaspoon kosher salt
1 cup (200 grams) peeled, cooked, and mashed honey golden sweet potato
4 cups (544 grams) all-purpose flour
8 tablespoons (1 stick; 113 grams) butter, at room temperature, plus for topping
Tip : you could use this dough to make dinner rolls, bugger buns, sweet potato cinnamon rolls, you name it...
