- Mocha'r paturi recipe: An easy recipe with mocha or banana flower marinated with mustard paste, coconut and green chillies, and roasted slowly on a tawa or kadai, or even in an oven. This is one of our family recipes that we have not seen anyone else make. The same dish can be made in a banana leaf or gourd leaf parcel too.
Paturi, according to food historian and consultant Pritha Sen, does not always have to be cooked in a leaf parcel. Watch Pritha Sen make a lovely mulo'r paturi:

Can I replace any other vegetable with the Brinjal?
Pritha di was just telling us that in her family they make this with pumpkin instead of brinjal. You can try it out.

What is the purpose of Brinjal or pumpkin in this recipe?
what if I make it only with mocha and no other veggie like you used brinjal?and can I add biuli daler bori in this recipe?
@@arsinasa2z956 I did make this without Brinjal but we only had very thick, and dry fibrous strands of mocha, it was distasteful, had a very bad mouth feel. So I'd suggest you use Brinjal. I didn't make it again but if I do I'll definitely use Brinjal, about bori, this tastes really good just on its own, I don't think it'll be necessary. Imagine like a fish paturi, you don't need the bori then.
বাহ্! আবার একটা অভিনব রান্না শিখলাম। অনেক শুভেচ্ছা নিও। নিন্দুকদের মুখে আচ্ছা করে ঝামা ঘষে দিয়েছো। একটা উচ্ছে কুমড়ো ভাজা রান্না দেখেই সব গেল গেল রব তুলেছিল। এবার তারা আচ্ছা জব্দ হয়েছে। আরে তারা এটা বোঝে না যে এটা শুধুই রান্না শেখার নিছক মাধ্যম নয় বরং বাঙালি রান্না বান্না celebrate করার একটা মাধ্যমও বটে। তোমরা এভাবেই এগিয়ে যাও। 😊

মোচার পাতুরি তে কুচো চিংড়ি দিলে আরো বেশি ভালো লাগে খেতে,তবে যারা পাতুরিটা আমিষ খেতে চায়,আমাদের এখানে এটাকে "মোচা মাখা" ও বলে থাকে,ভীষনই ভালো হয় খেতে।
তবে এঁচোড়ের রেসিপি কিন্তু এখনো পায়নি,চৈত্রের শেষ এখনো কাঁচা কাঁঠালের মরশুম,আর ঘরে এঁচোড় হবে না তা কি করে হয়,যদি সম্ভব হয়ে "ছানা এঁচোড়ের ডালনা" রেসিপিটা দিও।☺️

I have always loved mocha...Mochar ghonta of oh! Calcutta used to be my favourite when we were in India. This recipe is something very new and ofcourse tempting, would try it for sure. We cooked chicken korma last weekend following your video and bang on! As always it came out to be super delicious. Thanks bong eats.
