  • Mocha'r ghonto is special to anyone who has grown up in Bengal. Mocha is the banana blossom. The niramish (vegetarian) mocha'r ghonto with coconut (narkel) and chola (Bengal gram) is loved as much as mocha chingri, garnished with small freshwater prawns. In this video, we show methods of preparing both mocha'r ghonto as well as mocha with chingri. This also includes a very easy, step-by-step guide to cleaning, preparing and cutting mocha. Like any Bengali niramish recipe, this one uses no onion or garlic-the main flavours come from ginger, cumin, ghee and garam masala. Mocha provides a crunchy texture that is a canvas for all these flavours. Give this Bengali recipe of mocha a try. It is not the best looking dish, but once you taste mocha, it will change your life.

    RECIPE FOR DAL'ER BORA
    -------------------------------------------
    1. Soak mosur dal (orange lentils) in water for 30 minutes. Rinse and grind with salt and green chillies using as little water as possible. The grind should be a little coarse to provide boras texture.
    2. Heat oil on medium flame. Once hot, drop little dollops of the dal batter into the oil. Deep-fry until the boras are evenly golden in colour.

    Not saying out of any Bengali sentiment, but this channel is just crazy good. The sheer precision, the detailing, the videography and editing, the knowledge imparted, the BGMs, and ofcourse, the cooking. It's more like a work of art than mere cooking videos. I can only imagine how much effort must be going into this. All the best.

      satabdi deb , nice to here from you that your parents are from assam.. and the recipe of banana flower with pigeon is simpe.. I have seen my mother cook it in a very simple way..
      - clean the meat(pigeon) and cut into pieces
      -two medium sized potato(peel and cut into half)
      - banana flower(discard the outer hard layer and keep the inner part) chop well and put it in water so that it doesn't gets blackened
      -Chop one big onion,make a paste of ginger and garlic
      - 2 bay leaves,half a teaspoon cumin,2 dry red chillies,black pepper powder,turmeric and salt.,( regarding garam masala or any spices i haven't seen my mother adding any thing of it,she always keeps it simple with ginger-garlic paste and a bit of jeera powder and black pepper powder..)
      COOKING METHOD
      -Heat mustard oil in a wok..(measures difficult to say as mom always puts oil or any masala seeing the quantity of ingredients)
      -Add cumin seeds,let it splutter and then add bay leaves and dry red chillies,saute well
      -Add onion slices and saute until golden brown
      -Add ginger garlic paste,turmeric and stir a bit and let the masala cook,(or say let the raw smell of onions,garlic and ginger fade)
      -Now add the meat and potatoes together,mix it well or coat it well with the masalas
      -Fry the meat and potatoes for around 5 minutes in medium high heat.(it may stick to the bottom sometime because of the masalas but try to scrape them)
      -Now add the banana flower(throw away the water)
      -Add salt according to your taste
      -Give it a good mix..let all the ingredients blend well with each other
      -You can add a little water at a time if it sticks more.
      -Cover it for two minutes,uncover and then again cover until all the ingredients cook well.(keep stiring at regular intervals)
      -Now add black pepper powder and switch off the heat
      -Serve with rice 😊

    Btw, I keep the mocha florets in a bowl of water mixed with a little turmeric powder while the process of removal and cleaning of the florets gets completed . This prevents them from turning blackish .

    Before marriage i always use to sit with mom for clearing the florets... so much nostalgia... mocha is love !! My mom use to also make pakora of the inside part which u sliced and added in the whole thing.

      You probably know this already but do bite into a floret and check that it isn’t too bitter. Not all mochas are edible. Good luck!

    Ajker mission- eta banano. Everytime I used to walk past my neighbourhood Sri Lankan greengrocer here in London, I looked at mocha with so much nostalgia, chotobelar maa'r hater rannar kotha mone hoto, my partner who is a ''so called Bengali'' never had mochar ghonto (can you believe it!) and called this beautiful banana blossom 'rocket' at first sight which made me take up the challenge to make it one day and feed him to make him realise what a Bengali delicacy he has been missing throughout his life. In my 10 years of life in London, I never cooked mochar ghonto (I cook almost all Bengali and other Indian food at home all the time) as I didn't know what part of the mocha I need to throw away and what to keep, now I learnt, thanks to you two. Wish me luck today and hopefully I can make it a delicious Bengali dish and show it to my partner what I have been claiming about mochar ghonto.
