    Suggestion: Healthier substitute for maida and corn flour = besan or chick-pea flour and rice flour in equal proportions mixed together well.. In a large bowl mix the florets with the flour and listed dry spices, salt etc. Let stand for awhile. The salt will draw out the water in the florets. This should be sufficient to mix the dry ‘batter’. Add a spoonful of ghee and mix well adding a little cold water only if necessary. Make the chips following Sri Hebbar’s recipe.
    I have been cooking banana flower, and stem, all my life and did not know that we could make chutney from the petals. Thank you Hebbar’s kitchen.

      Thank you for your suggetion. I prepared chips 2 times so far. As a South Indian I tried besan and rice flour option first. It came out much better than maida and cornflour mix.

    Vaazhai poo kootu fans assemble 😂😂❤️!!! nd we eat the deepest part of the banana heart.... keep peeling of those florets and the whole thing gets smaller and smaller... the size of ur hand or lesser.... we eat that raw😍❤️... vaazhai maram... every thing in this tree has a use❤️... nd medicinal values...

      yes I used to eat the inner small part raw. My mom used to tell it is good for utreus (resembles utrues shape). We relished and lived with nature

    Banana flower is a regular thing in our diet (I'm a north eastern) and we make lots of dishes with it...but this is the 1st time I'm seeing banana flower chutney. Gonna try this 👍

    It's commonly known as Banana flower or vazhakoombu in Kerala. It's very healthy and full of protein and nutrients. It's a common side dish for lunch

    we bengalis were brought up with this recipies....but in other way...like we eat 'মোচার চপ which is banana floret cutlet nd other one is মোচার ঘন্ট which is banana floret stir fry with potato' ....both are amazing....
    but i'm amazed today with the chutney.....surely gonna try out this...

    Tip : let the florets dry completely before frying them otherwise the mixture separates from the florets and you get a mess
